Silver Dollar Sweet Potatoes
Move aside pancakes…there’s a new kid in town! Introducing silver dollar sweet potatoes! Roasted sweet potatoes topped with maple pecan syrup, served with vegan cinnamon yogurt and figs.
Jump to RecipeAre you a huge sucker for pancakes and all of the sweet treats in the morning? I know I am. But the classic, white flour filled pancake offers very little nutrition and leaves me hungry sooner than later. This led me to creating my new favorite breakfast…silver dollar sweet potatoes.
SWEET POTATOES
The main focus of this dish is roasted potato! These can be easily prepped in larger batches at the beginning of the week, making this a super convenient breakfast to throw together when you are a bit short on time…making it my daughter’s favorite school day breakfast. Sweet potatoes are packed full of nutrients and will help energize you and keep you satisfied and full for hours. Their natural sweetness makes you feel as though you are enjoying an indulgent treat.
PECAN MAPLE SYRUP
The roasted potatoes are topped off with a salted maple pecan drizzle, because who doesn’t love sweet and salty?! This flavorful sauce is cooked down and adds an amazing sweetness and texture to the dish. You can leave the figs fresh and raw on the side or cook them down with the syrup.
CINNAMON YOGURT (VEGAN)
In addition to my current sweet potato obsession, I am also really into yogurt lately. This can be made with regular yogurt or vegan yogurt. I take the yogurt to the next level by adding maple, cinnamon, lemon and vanilla. Adding these elements give the yogurt an elevated flavor…and in my head is a much healthier way to have pudding.
MAKE IT YOUR OWN
This recipe is very versatile. I originally made this dish with figs, but you can swap out any fruit. I even tossed some frozen cherries into the syrup as it was cooking down and it was perfection. You can also swap out the pecans for a nut or seed of your choice or leave it out all together if you want to lower the calories of the dish…but they bring a great element of texture to the dish so I would leave them in.

Silver Dollar Sweet Potatoes
Equipment
- Oven
Ingredients
- 4 Sweet Potatoes
- 12 fresh figs can substitute any fruit
Maple Nut Syrup
- 1/2 cup maple syrup
- 1/4 cup water
- 1 tbsp vanilla extract
- 1/4 cup pecans chopped
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp salt
Cinnamon Yogurt
- 1 cup vegan yogurt
- 1 tbsp maple syrup
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1 tbsp vanilla extract
- 1 juice of one lemon
Instructions
Roasted Sweet Potatoes
- Preheat oven to 400 degrees
- Wash sweet potatoes
- Cut sweet potatoes about 1/2 inch thick so they are round "silver dollars"
- Lay sweet potato slices on a baking sheet
- Roast for 40 minutes. Flip the sweet potatoes over half way through
- Remove from oven and set aside
- These can be prepped in advanced and stored in the fridge for quick meals. If potatoes are prepped in advance reheat them in a skillet over medium heat.
Maple Nut Glaze
- Mix all of the ingredients for the maple nut glaze in a pan
- Cook on medium heat for around 5 minutes, allowing sauce to reduce a bit, but allowing some liquid to remain
- When sauce is properly reduced, turn off heat
Cinnamon Yogurt
- Add all ingredients for cinnamon yogurt to a bowl and mix until evenly distributed
- This can be prepped in advanced and stored in the fridge for quicker morning meals
Figs
- Wash and slice fresh figs
- Place to the side if you want them fresh OR you can throw them in the Maple Nut Syrup while its reducing for hot, sweeter figs
- You can also replace figs with any fruit of your choosing
Put it all together
- On a plate place 1/4 of the baked sweet potatoes
- Drizzle 1/4 of the Maple Nut Syrup over the potatoes
- Place fresh figs and yogurt alongside the potatoes
- Repeat 3 more times for each plate
- Serve and eat!!
