Vegan chicken mini tacos, smothered in Madras Curry, air fried to perfection, and topped with fresh mint, cilantro, cucumbers, and tomatoes. These babies are LOADED with flavor and soooo simple to make!

Making air fried, vegan curry chicken tacos is incredibly simple! Tacos are such a beautiful food because you can fill them with pretty much anything that you desire…or that’s hanging out in your fridge. But for these air fryer mini tacos, you will be filling your mini taco shells with vegan curry chicken and topping them off with a simple combo of cucumber, tomato, mint and cilantro. This recipe has only 7 ingredients, but it packs a huge punch of flavor. That’s right, a convenient AND delicious meal!
To begin, place thawed vegan chicken on a cutting board and dice into small pieces. Then place vegan chicken in a bowl and mix with jarred Madras Curry.
For this recipe I went with the brand Maya Kaimal for the vegan Madras Curry and Daring Vegan chicken, but you can substitute any curry and vegan chicken you desire!
Stir the vegan chicken and curry until evenly covered. Next, evenly distribute your vegan chicken curry mix amongst your mini tortillas. Then fold the tortillas in half.
Once all of your mini tortillas are filled with vegan curry chicken and folded, it’s time to air fry them! Prepare the air fryer by spraying a thin layer of oil on the bottom or covering it with parchment paper. This step will keep your tacos from sticking to the air fryer. Then place your tortillas in the air fryer. Make sure they do not overlap for best results.
Air fry your mini vegan curry chicken tacos for at 375 for 6 minutes, or until mini tortillas are slightly crisp and golden brown and the vegan curry chicken is hot in the center. Flip your mini vegan tacos at the 3 minute mark so they cook evenly. If you have a small air fryer you may need to air fry your mini vegan tacos in batches.
When your mini air fryer tacos have been cooked to perfection, remove from air fryer and top them off with mint, cilantro, cucumbers, and tomatoes. Serve and enjoy!
VEGAN CHICKEN FOR AIR FRYER VEGAN CHICKEN CURRY TACOS
If you have not had the pleasure of eating Daring vegan chicken, today is the day! This plant based chicken alternative is fantastic, to say the least. It tastes so much like real chicken even your meat eating friends will be impressed. Not only is Daring vegan chicken delicious, it is a great source of vegan protein as well.
Not into vegan chicken? No problem! Substitute any protein you desire. Chickpeas would make a great, cheap, healthy alternative!
VEGAN MADRAS CURRY FOR VEGAN CURRY CHICKEN TACOS
For this recipe I went with Maya Kaimal’s Madras Curry. This vegan curry is fantastic for a jarred curry. It’s creamy, super flavorful and has a heat level that is spicy, but won’t make you want to cry. You can find it in many grocery stores in the International isle.
Feel free to substitute any jarred or homemade curry you desire!
Additional toppings for vegan curry chicken tacos
For this air fryer mini taco recipe I topped my vegan curry chicken off with fresh mint, cilantro, cucumbers and tomatoes. This in itself was delicious, but I also love topping these babies off with my cilantro mint vegan crema! Sky is the limit for toppings, go crazy!…but here are some suggestions.

Vegan Curry Chicken Tacos : air fryer recipe
Equipment
- air fryer
- knife
- cutting board
- mixing bowl
Ingredients
- 12 mini soft taco tortillas
- 1 bag of Daring vegan chicken
- 1/2 cup Madras Curry can substitute any curry of your choice
- 1 tomato, diced
- 1/2 seedless cucumber, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
Instructions
- Begin by chopping up one bag of thawed Daring vegan chicken into smaller pieces. If your vegan chicken is not already thawed, thaw in microwave for 1 minute.
- Place chopped vegan chicken in a bowl and add vegan madras curry
- Mix until vegan chicken is evenly covered with curry
- Lay out mini taco tortillas, place vegan curry chicken on tortillas. Distribute filling evenly amongst the 12 mini tacos.
- Fold tacos in half
- Place tacos in air fryer, make sure they aren't overlapping for best results. Spray air fryer with thin coat of oil or use parchment paper to prevent sticking
- Air fry tacos for 6 minutes at 375 or until outside is slightly crisp and golden brown and inside is hot. Flip tacos at the 3 minute mark to cook evenly
- **If you have a small air fryer you may to cook mini tacos in batches
- Once mini tacos have finished cooking, remove from air fryer and top with cucumber, tomato, cilantro, and mint or other topping of your choice
- Serve and enjoy!
