  • 12 oz small portobello mushrooms (baby bells) Can substitute any mushroom of choice
  • 8 oz mini sweet peppers, cut into pieces about 1 inch by 1 inch can substitute any pepper of choice
  • 1/2 sweet onion, cut into 1 inch by 1 inch pieces

  • 1 tbsp olive oil can substitute any neutral oil
  • 1 tsp Chana Masala spice mix
  • 1/4 tsp garam masala
  • 1/4 tsp salt

For Indian Spice and Herb Dipping Sauce

  • 2 tbsp vegan mayo can substitute vegan plain yogurt for lower calorie option
  • 1/2 tbsp water
  • 1 tbsp fresh mint, chopped
  • 1 tbsp fresh cilantro, chopped
  • 1 clove of garlic, diced small
  • 1/4 tsp garam masala
  • 1/8 tsp salt

Instructions
 

  • Preheat your air fryer to 375 degrees F
  • Place your wooden skewers in a container of water, make sure they are totally submerged. This will make your skewers damp which will prevent them from burning in the air fryer.

Prepare your vegetables

  • Prepare your veggies. Thoroughly wash the small portobello mushrooms, chop the sweet onion and peppers into 1-2 inch by 1-2 inch pieces (this size will allow you to skewer your vegetables without ripping them)
  • Place vegetables in a mixing bowl and add the ingredients listed under "vegetable kabob marinade"

  • Mix until vegetables are evenly coated. If you have time, feel free to let your vegetable sit and marinate. You don't NEED to let them sit though, the vegetables will be super flavorful even if they don't marinate long.

Skewer your vegetables

  • Carefully slide vegetables onto skewers. Do this slowly and carefully so you don't rip the vegetables or poke yourself. Repeat until all of the vegetable are used up

Air fry your vegetable skewers

  • Place vegetable skewers in the preheated air fryer. Cook for 8 minutes at 375 degrees F. Flip your skewers at the 4 minute mark so they will cook more evenly. Skewers will be ready when vegetables are tender and juicy.
    **Make sure you are placing your kabobs in a single layer so they cook evenly. If you have a small air fryer, you will need to cook your kabobs in smaller batches
  • **While your skewers are cooking in the air fryer, use your time wisely and move ahead to make the Indian Spice and Herb Dipping sauce
