- POMEGRANATE SEEDS
- TAHINI – Tahini is pureed toasted sesame seeds. It is thick in consistency, similar to a nut butter, making this a perfect ingredient to create a super creamy, vegan, caesar dressing. You can find Tahini in the nut butter section or the International section of the grocery store.
- CHICKPEAS OR WHITE BEANS – Use cooked chickpeas or white beans for this recipe. I personally used canned chickpeas.
- FRESH LEMON JUICE
- LEMON ZEST
- VINEGAR – Red wine vinegar or Apple Cider Vinegar work best
- MAPLE SYRUP – Can substitute agave or any sweetener
- WATER

HOW TO MAKE TAHINI POMEGRANATE DRESSING
This creamy tahini pomegranate dressing is so simple to make and it only takes two minutes! Place all of the ingredients in a blender…1/4 cup tahini, 1/4 cup water, 3/4 cup fresh pomegranate seeds, 1 cup white bean (or chickpeas), 2 tbsp lemon juice, zest from half a lemon, 1 1/2 tbsp vinegar, 3 tbsp maple syrup, 2 tsp dijon mustard, and 1/8 tsp sea salt.
Blend until smooth. Serve and enjoy!
TIPS FOR MAKING CREAMY TAHINI POMEGRANATE DRESSING
- USE SOFT BEANS – You want to make sure your cooked chickpeas or white beans are super soft. I recommend using canned beans to make things simple. But if you use beans that you cooked from scratch, make sure they are soft so they blend into a smoother consistency.
- TASTE TEST – Always taste test your sauces when using fresh ingredients and adjust as needed.
- CAN SUBSTITUTE POMEGRANATE JUICE – Feel free to swap out pomegranate juice. Just hold off on the water and only add a little if needed.
