Sometimes you just need to KEEP. IT. SIMPLE. STUPID! So this recipe is incredibly straight forwards and easy. It’s literally sliced watermelon…seedless of course, because who has time for anything else…fresh squeezed lemon juice, and a sprinkle of pink Himalayan sea salt. Although ridiculously simple, this combination really hits the spot during the warmer weather and is a constant snack in our house from late spring to early fall.
I cannot take credit for this recipe, but I couldn’t go without posting it. I first had the pleasure of popping this combo in my mouth when I was 24 years old. Yes, sadly I made it to the age of 24 without knowing what I was missing out on all those years. I was always a huge fan of watermelon and definitely ate my weight in watermelon each summer. But adding lemon juice and sea salt to it…an absolutely delicious, mind blowing combo, was not on my radar until my friend Jose introduced me to it and changed my life forever.
WATERMELON
I probably don’t need to tell you this, but watermelon is aaaaamazing! Not only is it incredibly delicious but it offers an endless list of benefits to your body. I could go on and on about the benefits, but I will just name a few.
First of all, watermelon is chock full of nutrients including vitamins A, C, potassium, and magnesium. And you get a lot of bang for you buck…One full cup of watermelon provides all of that for a measly 46 calories. This makes watermelon an excellent snack to chow down on without worrying about breaking the calorie bank.
Watermelon is also incredibly hydrating. You crave it in the summer for a reason…you’re thirsty! Staying hydrated in extremely important during those hot summer days. When it comes to delivering nutrients to cells, staying alert, and proper organ function, staying hydrated is key. And watermelon just so happens to be a tasty way to help meet those hydration goals.
LEMON & SEA SALT
The other two key players in this combo are not only flavorful, they come with their own bag of tricks as well.
Lemon is a vitamin C power house.
Pink Himalayan Sea Salt contains magnesium, potassium, and calcium. It can also aid in detoxifying your body.
PREP IN LARGE BATCHES
I love to cut a watermelon or two and prepare this dish in larger batches. It tastes even better when its been marinating for a while and served cold. It makes the perfect grab-and-go snack for picnics or a great, light accompaniment for a meal.

Ingredients
- 1 Watermelon, cubed
- 3 lemons, juiced
- 1 tsp pink Himalayan sea salt
Instructions
- Cut watermelon into cubes
- Top with fresh squeezed lemon juice
- Top with sea salt
- Serve and enjoy
