Simply tossing mushroom in the air fryer with a touch of salt and oil is delicious all on its own. But stuffing your mushrooms AND THEN air frying them…now we are getting fancy and incredibly flavorful! Air fryer stuffed mushrooms can feel like a pretty special treat, but they are actually super simple to make!

For this air fryer Indian mushroom recipe you will be stuffing your mushrooms with a medley of chickpeas, peas, garlic, ginger, and curry. This combination is complex in flavor, but extremely simple to prepare! The secret?…combining fresh ingredients with jarred curry sauce!

Curry sauce is delicious. Why? Because there are a TON of ingredients in it to create a very flavorful, very complex sauce. Because of this, making curry can be very intimidating and requires a LOT of spices. We often do not have the time, energy, or the loaded spice cabinet to easily make curry…so for this recipe, I decided to make things simple and just went with a jarred, pre-made curry sauce!

There are many delicious jarred curry options on the store shelves these days. Many companies have taken a lot of time and effort to perfect their craft, allowing us to easily just open a jar when we are craving that delicious curry flavor!

One of my favorite jarred curry brands is Maya Kaimal. You can find this on store shelves at many grocery stores or online. Maya Kaimal has several vegan curry options that are all delicious! For this recipe I went with their Kashmiri Curry. This jarred curry sauce is mild with a rich tomato base and nutmeg. Feel free to swap this out for your favorite jarred curry sauce if desired!

What size portobello mushrooms should I use to make stuffed air fryer Indian mushrooms

Portobello mushrooms come in several sizes! I love this about them because you can cater the size to your particular meal. There are large portobello mushrooms, which I personally love to use for meals. Then there are small portobello mushrooms, aka baby Bellas, which are perfect for a bite-sized experience. The third option for portobello mushrooms is the slider sized portobello. This one is a happy medium, in between the large portobello and bite-sized options. I love using the slider sized for stuffed mushrooms, it allows you to stuff in a bit more stuffing, but they are still a perfect size for a finger food or appetizer.

For this recipe I went with the slider sized portobello mushrooms, but feel free to use the small, baby Bella size if desired!

How to make Air Fryer Indian Mushrooms Stuffed with Curry Chickpeas

As mentioned above, this air fryer mushroom recipe looks impressive, but is SO EASY TO MAKE!

First you will thoroughly wash and de-stem your mushrooms. Do this by using a little knife and cutting off the stems.

Next, combine curry sauce, chickpeas, garlic, ginger, and salt in a bowl. With a fork, smash the chickpeas and mix all of the ingredients together thoroughly.

Once the chickpeas have been mashed and mixed, add the frozen green peas and gently mix to incorporate. Yes, the green peas can still be frozen when adding them to the mix, they will that and cook in the air fryer.

Now it’s time to stuff your mushrooms! Evenly distribute the curry chickpea mix into each mushroom. To make sure the mushrooms remain moist during as they air fry, spray them with a light amount of oil, or brush on a light coating of oil. You can skip this step if you are looking to cut back on oil, but your mushrooms with come out a bit more dry.

Now it’s time to air fry your stuffed mushrooms! Place your stuffed mushrooms in a preheated air fryer. Make sure they are in a single layer, if you have a smaller air fryer, you will need to cook them in batches. Air fry your stuffed portobellos for 8 minutes at 375 degrees F. When finished, they will be slightly crispy on top and mushrooms will be soft, hot and juicy.

In 8 minutes you will have perfectly cooked air fryer Indian mushrooms stuffed with chickpea curry! Remove the stuffed mushrooms from your air fryer and top with chopped fresh cilantro and mint. Serve and enjoy!

Ingredients
  

  • 16 oz portobello mushrooms, slider sized Can substitute baby portobello mushrooms instead
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup jarred, vegan curry sauce I used Maya Kaimal's Kashmiri Curry, but you can substitute your favorite jarred curry sauce
  • 2 cloves of garlic, chopped small
  • 1 inch fresh ginger, grated
  • 1/4 tsp salt
  • 1/2 cup frozen green peas
  • 1 tbsp fresh mint, chopped
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp oil Used to brush on stuffed mushrooms for cooking process. Can substitute oil spray

Instructions
 

  • Begin by preheating your air fryer to 375 degrees F

Prepare your mushrooms

  • First we need to prepare our mushrooms. Thoroughly wash your mushrooms and pat dry
  • Remove the stems of the mushrooms.
    **You can save the stems for veggie stock or other recipe. Or you can discard the stems
  • Set mushrooms aside

Prepare the Curry Chickpea Stuffing

  • Drain and rinse your can of chickpeas

  • In a mixing bowl combine chickpeas, 1/2 cup of jarred vegan curry, 2 cloves of chopped garlic, 1 inch of grated ginger, and 1/4 tsp of salt
  • Using a fork, mash the chickpeas and mix to combine
  • Add the green peas and gently mix to combine

Stuff the mushrooms

  • Stuff each mushroom with the curry chickpea mix

Air Fry the stuffed mushroom

  • Place the mushrooms in the preheated air fryer. Make sure to place them in a single layer. If you have a small air fryer you will need to cook them in batches
  • Air fry for 8 minutes at 375 degrees F. When ready, curry chickpea mix will be slightly crisp and mushrooms will be tender and moist.

Serve and Enjoy

  • Once stuffed mushrooms have cooked for 8 minutes, remove them from the air fryer. Top with chopped fresh mint and cilantro.
