Butternut squash is sweet by nature. But roast it with a touch of brown sugar and top it with pumpkin spice maple syrup…now you’re really in business!  BUTTERNUT SQUASH

Bring a sweet, yet nutrient packed dish to your breakfast table! Butternut squash is so amazing! First of all, it’s absolutely delicious. With its soft texture, when roasted, and its slightly nutty, sweet flavor, every bite is a pleasure. 

But butternut squash doesn’t just have its flavor to write home about, it is also packed with nutrients and goodness. Butternut squash is rich in fiber, which is beneficial for many reasons. Fiber aids in healthy digestion and keeps you full longer, to name a few.  Butternut squash is also a great source of vitamin A, C, magnesium, calcium and potassium. 

Butternut squash is full of beta-carotene and Alfa-carotene, which is converted into vitamin A by your body, and is great for your immune system. 

HOW TO PREPARE BUTTER SQUASH

I know, I know, if you haven’t prepared butternut squash before, it can appear a bit intimidating. But I promise it is not! Preparing butternut squash is actually super simple. All you need is a vegetable peeler and a decent knife and you’re in business! 

First, peel the squash. Do this by removing the outer layer with a vegetable peeler.

 

Once skin is removed, just remove seeds and cut the butternut squash into the pieces of your desired size and shape. 

To roast, toss in olive oil and seasoning of your choice and bake. If cut into pieces, Butternut squash takes about 30 minutes to roast in a 400 degree oven. Time may vary depending on size of pieces.

Pecans are delicious all year round, but I definitely associate them with fall and winter. With their nutty flavor and not too crunchy, not too soft texture, they are a wonderful addition to many sweet potato, pumpkin and squash dishes. But their flavor and texture is not all pecans have going for them. Did you know pecans contain over 19 vitamins and minerals?! That’s right! Calcium, potassium, magnesium, and several B vitamins are packed in these babies, just to name a few! So a handful of pecans is always an excellent idea. 

PUMPKIN SPICE PECAN MAPLE SAUCE

This sauce is super simple to make and oh so delicious! It’s only a few simple ingredients but this sweet, slightly salty, pumpkin spice combo will make your taste buds dance and leave you begging for more.

To make this super simple recipe, simply add ingredients to a sauce pan and cook over medium heat until it is reduced to thickened, but still saucy.

Ingredients
  

FOR BUTTERNUT SQUASH

  • 1 whole butternut squash
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1 tsp pumpkin seasoning

FOR PUMPKIN SPICE MAPLE SAUCE

  • 1/2 cup pecans, chopped
  • 3/4 cup maple syrup
  • 3/4 cup water
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 tsp pumpkin spice seasoning

TOPPINGS

  • vegan whipped cream to taste can substitute vegan ice cream

Instructions
 

FOR BUTTER NUT SQUASH

  • Preheat oven to 400 degrees
  • Time to prepare the butternut squash!
  • Start by peeling skin off of the butternut squash with vegetable peeler

  • Once skin is removed, cut off ends
  • Then cut down the longer part of the butternut squash for the circular "silver dollar" shape. The pieces should be about 1/4 inch thick. Once you get to the bulb part of the butternut squash, stop cutting. There are seeds inside.

  • Cut bulb in half and remove seeds

  • Cut the remainder of the squash into 1/4 inch thick pieces. These pieces will not be the circular "silver dollar" shape.
  • Place cut butternut squash into a large bowl

  • Add olive oil, brown sugar, and pumpkin seasoning. Mix until evenly coated

  • Place squash on baking sheet lined with parchment paper

  • Bake in oven for 30 minutes or until soft and roasted. Flip pieces over at 15 minute mark to bake evenly.
  • **Cooking time may vary with oven or size of pieces
  • **While the squash is baking, move ahead and prepare the remainder of the recipe
  • When squash has finished baking, remove from oven and set aside

FOR PUMPKIN SPICE MAPLE SAUCE

  • Place all ingredients listed under "pumpkin spice maple sauce" in a non stick skillet

  • Stir until evenly mixed. Turn on stove to medium heat.
  • In a few minutes, mix will begin to bubble. Bring heat down lightly closer to medium-low. Mix should continue to bubble and simmer, but not bubble over or burn. Mix often.

  • Cook for a few minutes until the sauce thickens, but should still remain a bit liquidy and saucy. If you accidentally cook off too much liquid, just add a bit of water to it. Remove from heat

PUT IT ALL TOGETHER

  • Recipe makes 4 servings
  • Place 1/4 of the roasted butternut squash into each bowl (serves 4)
