This Sweet Pistachio Tahini Dip is so simple to make! All you need is two minutes and blender. This vegan fruit dip is just sweet enough to call it a dessert, but it’s rich with protein and nutrients. You can also spread it on toast, pancakes, serve it over ice cream, sky is the limit!

WHAT YOU NEED TO MAKE SWEET PISTACHIO TAHINI DIP

  • PISTACHIOS – can use raw or roasted. I went with lightly salted roasted for extra flavor
  • ALMOND EXTRACT – a lot of people don’t realize, but the flavor that is associated with a lot of pistachio desserts comes more from almond extract than from the pistachio. So this is your secret flavor weapon for this recipe
  • SPINACH – this is optional, but it enhances the pretty green color and it provides a little extra nutrients
  • TAHINI – Tahini is pureed toasted sesame seeds. It is thick in consistency, similar to a nut butter, making this a perfect ingredient to create a super creamy, vegan, caesar dressing. You can find Tahini in the nut butter section or the International section of the grocery store.
  • CHICKPEAS OR WHITE BEANS – Use cooked chickpeas or white beans for this recipe. I personally used canned chickpeas.
  • VANILLA EXTRACT
  • MAPLE SYRUP – can substitute agave or any sweetener of choice
  • SEA SALT
  • WATER

HOW TO MAKE PISTACHIO VEGAN FRUIT DIP

Making pistachio vegan fruit dip is incredibly easy and only takes two minutes to make. Simply combine in blender…. 1/2 cup white bean (or chickpeas, 1/4 cup tahini, 1/4 cup water, 1/2 tsp almond extract, 1/2 tsp vanilla extract, 1/8 tsp sea salt, 2 tbsp maple syrup, and a handful of spinach. Don’t add the pistachios yet. Blend until smooth.

Then add 2 tbsp of pistachios and blend for another 10-15 seconds. The goal is to break down the pistachios a little bit into crumbles, but not to totally puree them. That way the dip will have more texture!

TIPS FOR MAKING SWEET PISTACHIO TAHINI DIP

  • USE SOFT BEANS – You want to make sure your cooked chickpeas or white beans are super soft. I recommend using canned beans to make things simple. But if you use beans that you cooked from scratch, make sure they are soft so they blend into a smoother consistency. 
  • TASTE TEST – Always taste test your sauces when using fresh ingredients and adjust as needed.
  • BLEND PISTACHIOS AT THE END – You can blend everything together, but I prefer to blend the pistachios for less time at the end. This allows them to remain as crumbles, giving the dip more texture. If you want everything super smooth, just blend them with everything else in the beginning.

WHAT TO SERVE WITH SWEET PISTACHIO VEGAN FRUIT DIP

This Sweet Pistachio tahini dip is meant to be a vegan fruit dip. Some of my recommend fruit to serve with this recipe are strawberries and figs. But any fruit would pair nicely!

You can also serve with sweet pistachio tahini dip with sliced bread or crackers. Or spread it on a sweet and savory sandwich or drizzle it on French toast. Sky is the limit!

Ingredients
  

  • 1/2 cup white beans or chickpeas I used canned
  • 1/4 cup tahini
  • 1/4 cup water
  • handful fresh spinach This is just for color, not flavor
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1/8 tsp sea salt
  • 1 tbsp maple syrup
  • 2 tbsp pistachios

Instructions
 

  • In a blender, combine all of the ingredients except the pistachios. Leave those out for now
  • Blend ingredients until smooth. This will take about a minute for everything to break down

  • Add the 2 tbsp of pistachios and blend for another 10 or 15 seconds. The goal is to have the pistachios break down a bit, but you don't want to totally puree them. This way the dip still has texture
  • Serve and enjoy!
