These vegan Irish loaded baked potatoes are perfect for those days when you are craving meat and cheese, but want to keep things plant-based. Thanks to the incredible flavor of Beyond sausages and this cleverly seasoned vegan Guinness cheese sauce, vegans, vegetarians, AND meat eaters will fall in love with this recipe!

VEGAN SUBSTITUTE FOR BANGERS

These days vegans, vegetarians, and those looking to eat less meat are totally spoiled. The store shelves are now loaded with delicious, plant-based, meat substitutes that taste so much like actual meat!

Amongst the many options for vegan meat is one of my personal favorites, Beyond Sausage. Beyond Sausage is so tasty. It’s texture and flavor taste so much like traditional sausage! I actually have lot of friends that do eat meat, but are completely satisfied with this vegan sausage option. You can find Beyond meat sausage in the frozen meat alternative section of your grocery store. Sometimes, you can also find it refrigerated.

All of this being said, it’s no surprise that I went with Beyond Sausage for my vegan bangers! Feel free to substitute your favorite vegan sausage if desired.

HOW TO MAKE A PERFECT BAKED POTATO

Cooking a baked potato is incredibly easy!

Start by thoroughly washing your potatoes. Next, take a fork and pierce the potato about 4 or 5 times to create holes. This will allow the potato to release steam as it bakes, which will prevent the potato from bursting while baking.

Next, brush the potatoes with a thin layer of olive oil. Then you will wrap them in tin foil, place them on a baking sheet and off they go into a preheated oven.

Cook your baked potatoes at 425 degrees F for an hour. There you have it! Easy, perfectly baked potatoes for your vegan Irish loaded baked potatoes!

Baking everything together

This vegan loaded Irish baked potato recipe has a lot going on, but it is actually super simple to make! You can roast your broccoli and vegan bangers with the baked potatoes! Simply add them to the oven when you have 25 minutes left for your baked potatoes. This will allow everything to finish baking at the same time!

While your potatoes, broccoli, and vegan bangers are in the oven, you can use that time to create your vegan Guinness Cheese Sauce.

Vegan Guinness Cheese Sauce for Loaded Irish Baked Potatoes

Guinness Vegan Cheese Sauce is a game changer! This creamy, delicious, non diary cheese sauce is perfect for baked potatoes!

Guinness Vegan Cheese Sauce is made with silken tofu, vegan cheese, Guinness and the perfect blend of seasoning to give this non dairy, vegan sauce a cheesy flavor and creamy consistency…without actually using cheese!

This recipe is super simple to make, all you need is a blender and a sauce pan, and you will have a creamy, flavorful, Guinness vegan cheese sauce in little time and with very little effort! 

HOW TO MAKE NON DAIRY, VEGAN “CHEESE” SAUCE TASTE LIKE CHEESE

To make vegan and non dairy cheese sauce, you cannot actually include cheese. So how do you create a cheesy flavor and a creamy consistency without actually using cheese? There are a few simple tricks to get you there!

CREATING A CHEESY FLAVOR FOR GUINNESS VEGAN CHEESE SAUCE

To create a cheese-like flavor without actually using cheese you will combine vegan cheese with nutritional yeast, soy sauce, ketchup and a blend of spices.

VEGAN SHREDDED CHEESE

For this recipe I went with Daiya’s shredded vegan cheddar cheese. This non dairy cheese alternative is stretchy, gooey, and has a nice cheesy flavor to it! Feel free to substitute your favorite vegan cheese if desired.

NUTRITIONAL YEAST

Nutritional yeast is another important ingredient to give this Guinness vegan cheese sauce its cheesy flavor.

Nutritional yeast, also known as nooch, is basically nature’s vegan cheese powder! Nutritional yeast is yeast made from living saccharomyces cerevisiae yeast, which is the same yeast used to make bread. Nutritional yeast is powdery, with large flakes and has a mustard-like color. 

Nutritional yeast has a unique, cheese-like flavor that can be described as savory and slightly nutty. This delicious, flavor boosting ingredient is very popular in vegan and dairy free cheese recipes and is often the key ingredient to create a dairy free, cheese-like flavor.

You can find nutritional yeast in most grocery store in the health food section or the spice aisle. You can also purchase nutritional yeast online!

OTHER INGREDIENTS TO HELP CREATE A CHEESY FLAVOR FOR VEGAN BEER CHEESE SAUCE

The addition of vegan cheese and nutritional yeast do a fantastic job of creating a very cheesy flavor all on their own. But adding a few extra ingredients can really help round out the flavor of this Guinness vegan cheese sauce.

To bring the flavor of this vegan cheese sauce to the next level, you will be adding a spice blend of garlic powder, onion powder, and smoked paprika. You will also add turmeric powder, but that is more for color than taste…remember you eat with your eyes first.

You will also add ketchup (sweet and acidic), Dijon whole grain mustard (sharp kick), and soy sauce (savory, salty, umami) to give your Guinness vegan cheese sauce more flavor.

USING SILKEN TOFU IN GUINNESS VEGAN CHEESE SAUCE

Using silken tofu in this Guinness vegan cheese sauce is key for creating a smooth, creamy consistency! It also adds extra protein to the dip, which never hurts. It’s also much lower in calories and fat than heavy cream, nuts, or vegan butter, which is often used in cheese sauces, making this a healthier option.

Simply place silken tofu in the blender, along with the other flavor boosting ingredients, and in about 30 seconds you will have a beautifully smooth, creamy base for your plant-based cheese sauce!

USING BEER IN VEGAN CHEESE SAUCE

Beer and cheese are two peas in a pod and pair fabulously together! Vegan cheese sauce is delicious all on its own…but add beer to the mix and you will create a more complex flavor that you can really write home about!

For this recipe I went with Guinness Extra Stout beer. Feel free to substitute any stout of lager of your choice.

IS GUINNESS VEGAN?

Yes! It was a beautiful day for vegans when Guinness finally became vegan! It’s official folks…Guinness beer is vegan!

WHAT DOES GUINNESS BEER TASTE LIKE?

For those of us who have not had Guinness…Guinness is a stout beer. It can be described as light bodied, slightly creamy and sweet. Guinness has a bit of a sharp, bitter flavor from hops, but it’s rounded out with hints of malt, cocoa, cherry and raisin.

Adding Guinness to this vegan cheese sauce gives it a sharp, complex flavor that any beer.

What to serve with vegan Irish loaded baked potatoes

These vegan Irish loaded baked potatoes are of course…LOADED…making them the perfect meal to eat all on their own. But you can cut them in half and serve them as a side dish as well! Serve these vegan Irish loaded baked potatoes with Beyond meat beer sloppy Joe sliders or Guinness vegan steak sliders and really make your dinner party guests go wild!

Ingredients
  

  • 4 large potatoes
  • 1 head of broccoli, chopped
  • 2 tbsp olive oil 1 tbsp for potatoes, 1 tbsp for broccoli
  • 1/4 tsp salt
  • 2 vegan Beyond Sausages

For vegan Guinness Cheese Sauce (that go in the blender)

  • 1/2 container of silken or soft tofu
  • 1/2 cup vegan cheese I used Daiya's vegan shredded cheddar
  • 1/4 cup non dairy milk soy milk, oat milk, and cashew milk work best
  • 1/4 cup nutritional yeast
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp smoked paprika
  • 1/8 tsp turmeric included for coloring
  • 1/2 tsp Dijon whole grain mustard
  • 1 tbsp ketchup
  • 1/2 tbsp soy sauce

For vegan Guinness Cheese Sauce (that don't go in the blender)

  • 1 clove of garlic, chopped
  • 1/2 tbsp olive oil
  • 1/4 cup Guinness beer I used Guinness Extra Stout for bolder flavor. Can substitute beer of choice

Garnish

  • 1 tbsp chives, chopped

Instructions
 

Prepare the baked potatoes

  • Preheat oven to 425 F
  • Begin by thoroughly washing the 4 large potatoes
  • Using a fork, pierce the skin of the potatoes about 4 or 5 times to create small holes
  • **don't skip this step! Poking holes in your potatoes allows the potatoes to release steam while baking, preventing potatoes from bursting during the cooking process

  • Brush 1 tbsp of olive oil on the potatoes so that they are totally covered

  • Place oiled potatoes in tin foil, wrap, place on a baking tray

  • Place potatoes in a preheated oven. Bake for one hour.
  • **while potatoes are baking, move onto the rest of the recipe

Prepare the broccoli and bangers (vegan sausage)

  • Chop the head of broccoli into smaller pieces
  • Place chopped broccoli in a bowl and add 1 tbsp of olive oil and 1/4 tsp salt. Mix until evenly coated

  • Place seasoned broccoli and vegan sausage on a baking tray lined with parchment paper (for easy clean up)

  • When your potatoes have 25 minutes left, place the vegan Beyond sausage and broccoli on the baking tray and bake for the remaining 25 minutes.

Prepare the vegan Guinness cheese sauce

  • Begin by adding all of the ingredients list under "Ingredients that go in the blender" into a blender. Blend on high until smooth. This will take around 30 seconds. Set aside

  • Next, add 1/2 tbsp olive oil and chopped garlic cloves to a sauce pan. Cook over medium heat for 2 minutes.

  • Add the ingredients that have been blended, along with 1/4 cup of Guinness beer. Stir until thoroughly mixed and bring heat down to low

  • Allow sauce to cook for other 15 minutes. Stir often with a spatula so sauce does not stick to the pan and burn.
  • Remove from heat. Set aside and cover with lid to keep warm

Put it all together

  • Once potatoes, broccoli, and vegan bangers are done baking and the vegan Guinness cheese sauce has been made, it's time to put it all together!
  • Cut vegan bangers (Beyond sausage) into smaller pieces

  • Unwrap and cut open the baked potatoes

  • Place each baked potato in a serving bowl. Top with broccoli, chopped vegan bangers, and vegan Guinness Cheese sauce. Top with chives
