Love sweets in the morning? I know I do! But starting your day off with a plate of pancakes full of processed sugars, white flour, and little to no nutrients, should probably be saved for special occasions. Luckily you CAN have your cake and eat it too…or in this case pancakes with these Rosemary Maple & Blackberry Silver Dollar Sweet Potatoes.
These Rosemary Maple & Blackberry Silver Dollar Sweet Potatoes are an amazing replacement for pancakes! Roasted sweet potatoes are the base of this recipe. When you roast sweet potatoes they are incredibly delicious and a bit sweet all on their own. But tossed in a bit of maple syrup and a sprinkle of salt…now your taste buds really have something to talk about. With the delicious, melt in your mouth flavor sweet potatoes have to offer AND the fact that they are loaded with nutrients and will keep you full for hours…it will be easy to pass on the pancakes.
VEGAN FALL RECIPE
These sweet potatoes are extra special because they are paired with one of my favorite flavor combos, Rosemary, maple, and blackberries. The savoriness of rosemary in combination with the tartness of blackberries and the sweet unique flavor of maple syrup is a trio you didn’t know you were missing.
I love this combo year round, but this dish is absolutely perfect for fall and the holidays, making it an excellent vegan fall recipe.
And of course this plate of heaven could only be made better if it were topped off with ice cream. In this case, Van Leeuwen’s vegan brown sugar chunk ice cream. Are you drooling yet?
SWEET POTATOES
If you didn’t already know, sweet potatoes are amazing! Sweet potatoes are an excellent source of vitamin c, potassium, and beta carotene. Beta carotene, which makes sweet potatoes a “super food”, is important for the health of your skin, bones and vision, as well as your reproductive health and immune system. Sweet potatoes are also rich in fiber, allowing them to help keep you fueled and full for hours.
Sweet potatoes can be fried, boiled, or roasted. Roasting sweet potatoes is hands down my favorite cooking method. Baking them really seems to bring out their natural sweet flavor the most.
ROSEMARY MAPLE SYRUP
Rosemary maple syrup is a flavor combo you didn’t know you were missing! It’s super simple to make and can be made in larger batches for your convenience.
Simply combine fresh rosemary with maple syrup. Add a pinch of salt, touch of vanilla, cinnamon to really drive the flavor home!
To infuse the maple syrup with the flavor of rosemary, you simply allow the combination to boil and then simmer for a little while. Remove the rosemary at the end and done! Magically delicious Rosemary Maple Syrup!

Blackberries are small, yet powerful. First of all, they are full of nutrients and antioxidants. Antioxidants have been shown to reduce inflammation and possibly help in the prevention of cancer and other diseases. Blackberries are also high in vitamin C, vitamin K, and magnesium, making them an excellent addition to any meal.
In this recipe, blackberries play a big role in perfectly balancing out the dish. With their bright, tart flavor, blackberries are the perfect addition to sweet potatoes and rosemary maple. You can use fresh or frozen blackberries for this recipe.
SUNFLOWER SEEDS
Sunflower seeds have a lot to offer any dish. They have a delicious, nutty flavor and a wonderful little crunch that can add a lot of texture to a meal. But they are also full of vitamins and nutrients! They are particularly high in selenium and vitamin E, but also contain copper, magnesium, and manganese, to name a few. You can eat them raw, but they are extra delicious when roasted and salted! In this recipe they are coated with a bit of maple syrup and tossed in the oven with the sweet potatoes to roast.
VEGAN MEAL PREP
This recipe is perfect for meal prep. If you take the time to double or triple this recipe at the beginning of the week, you can have a quick meal that takes minutes to throw together all week long! Note this recipe makes 3 serving, so if you’re dining alone, one batch can last you days.
You can simply reheat the sweet potato slices on a skillet, then top with Rosemary maple syrup, blackberries, and vegan ice cream!
Rosemary Maple & Blackberry Silver Dollar Sweet Potatoes
Ingredients
FOR ROASTED SWEET POTATOES AND SUNFLOWER SEEDS
- 3 large sweet potatoes
- 1/4 cup sunflower seeds
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1/8 tsp cinnamon
- 1/8 tsp salt
FOR ROSEMARY MAPLE SYRUP
- 6 tbsp maple syrup
- 6 tbsp water
- 1/8 tsp cinnamon
- 1/8 tsp salt
- 1 tsp vanilla
- 2 sprigs of fresh rosemary
- 2 cup black berries can be frozen or fresh
- 3 scoops vegan Ice Cream I used Van Leeuwen's Brown Sugar Chunk Ice Cream
Instructions
PREP ROASTED SWEET POTATOES AND SUNFLOWER SEEDS
- Preheat oven to 400 degrees
- Wash sweet potatoes
- Cut sweet potatoes about 1/2 inch thick so they are round "silver dollars"
- Put sweet potatoes in a bowl with sunflower seeds
- Add maple syrup, olive oil, cinnamon, and salt
- Mix until evenly coated
- Lay mix out on baking sheet lined with parchment paper
- Roast for at least 25 minutes, may take up to 40 minutes to cook through. Depending on size of sweet potatoes size and thickness cooking time may very. Sweet potatoes are done when they are soft enough to easily run a fork through.
- Remove from oven and set aside
- **While sweet potatoes are baking, move ahead and prep the rest of the dish
- These sweet potatoes can be prepped in advance and stored in the fridge for quick meals. If potatoes are prepped in advance reheat them in a skillet over medium heat.
PREP ROSEMARY MAPLE SYRUP
- In a skillet add all ingredients for Rosemary Maple syrup, except for blackberries. Keep blackberries aside for now
- Heat ingredients in a skillet over medium heat until it begins to bubble. Once it starts to bubble, drop heat down to medium-low. Cook down syrup until the water cooks out and the rosemary flavor is infused
- Once syrup is done infusing with flavor and cooking off the water, remove rosemary sprigs. Note** you still want the syrup to be liquid and syrupy. Don't cook to long and turn it into a thick caramel
- Add blackberries and cook for another minute until heated
- Remove from heat
PUT IT ALL TOGETHER
- Plate sweet potatoes and sunflower seeds
- Top with Rosemary Maple Syrup and Blackberries
- Top with a scoop if vegan ice cream
- Serve and enjoy!
