Simply tossing mushroom in the air fryer with a touch of salt and oil is delicious all on its own. But stuffing your mushrooms AND THEN air frying them…now we are getting fancy and incredibly flavorful! Air fryer stuffed mushrooms can feel like a pretty special treat, but they are actually super simple to make!

For this air fryer Indian mushroom recipe you will be stuffing your mushrooms with a medley of shredded potatoes (I used frozen, pre-shredded to make life easy), shredded carrots, and green peas. This medley of veggies is then seasoned with garlic, ginger, onion, Garam masala, Chana Masala, vegan mayo and salt. This combination is complex in flavor, but extremely simple to prepare!

SPICES USED FOR INDIAN POTATO STUFFED MUSHROOMS

Indian cuisine is often loaded with complex flavor. How? Because there are often a TON of spices used to create it. This leads to delicious results of course…but you have to have a lot of spices in your spice cabinet. Luckily there are ways to get a complex Indian inspired flavor in a much easier way. The secret? Combining Chana Masala Spice Mix with garam masala. 

GARAM MASALA AND CHANA MASALA SPICE MIX FOR INDIAN AIR FRYER MUSHROOMS

Instead of using a long list of spices to achieve a complex Indian inspired flavor, you can make things simple and reach for just two! If you combine Garam Masala and Chana Masala spice mix you can create an incredibly delicious, complex flavor! 

You can find both of these spices in the International isle or spice isle of your grocery store. You can also easily find them at your local Indian market or online.

Chana Masala spice mix is a blend of coriander, dehydrated mango, salt, chili, cumin, musk melon, pomegranate seeds, ginger, black salt, pepper, fenugreek leaves, cassia, mint leaves, cardamom, cloves, nutmeg, caraway, mace, and cardamom….like I said…very complex!

Garam masala is a combination of cinnamon, peppercorns, mustard seeds, cardamom, cloves, mace, nutmeg, and coriander.

So when you put the two of them together you create a delicious blend of spices without measuring out a truck load of spices!

WHAT SIZE PORTOBELLO MUSHROOMS SHOULD I USE TO MAKE AIR FRYER INDIAN POTATO STUFFED MUSHROOMS

Portobello mushrooms come in several sizes! I love this about them because you can cater the size to your particular meal. There are large portobello mushrooms, which I personally love to use for meals. Then there are small sized portobello mushrooms, aka baby Bellas, which are perfect for a bite-sized experience. The third option for portobello mushrooms is the slider sized portobello. This one is a happy medium, in between the large portobello and bite-sized options.

I love using all of them, but for these Indian Potato stuffed mushrooms, I went with the baby Bellas. Using this size portobello mushroom will make these vegan stuffed mushrooms the perfect bite-sized finger food!

How to make Indian Potato stuffed mushrooms for the air fryer

As mentioned above, this air fryer mushroom recipe looks impressive, but is SO EASY TO MAKE!

First you will thoroughly wash and de-stem your mushrooms. Do this by using a little knife and cutting off the stems.

Next, combine 1/2 cup shredded potatoes (use frozen pre-shredded potatoes, but defrost before using), 1/2 shredded carrots, 1/4 cup green peas (use frozen, defrost before using), 1 clove of chopped garlic, 1/2 inch grated garlic, 1/4 small onion (chopped), 1/2 tsp Chana Masala, 1/4 tsp garam masala, 1 tbsp vegan mayo, and 1/8 tsp salt. Mix until evenly combined.

Now it’s time to stuff your mushrooms! Evenly distribute the spiced potato mix into each mushroom. To make sure the mushrooms remain moist during as they air fry, spray them with a light amount of oil, or brush on a light coating of oil. You can skip this step if you are looking to cut back on oil, but your mushrooms with come out a bit more dry.

Now it’s time to air fry your stuffed mushrooms! Place your stuffed mushrooms in a preheated air fryer. Make sure they are in a single layer, if you have a smaller air fryer, you will need to cook them in batches. Air fry your stuffed portobellos for 8 minutes at 375 degrees F. When finished, they will be slightly crispy on top and mushrooms will be soft, hot and juicy.

In 8 minutes you will have perfectly cooked air fryer mushrooms stuffed with Indian spiced potatoes, carrots, and peas! Remove the stuffed mushrooms, serve and enjoy!

  • 12 oz small portobello mushrooms (aka baby Bellas) Can substitute slider sized if desired
  • 1/2 cup frozen shredded potatoes, thawed
  • 1/4 cup frozen green peas, thawed
  • 1/2 cup carrots, shredded
  • 1 clove of garlic, chopped small
  • 1/2 inch fresh ginger, grated
  • 1/4 small onion, finely diced
  • 1/2 tsp Chana Masala spice mix
  • 1/4 tsp garam masala
  • 1 tbsp vegan mayo can substitute vegan yogurt for lighter version
  • 1/8 tsp salt
  • 1 tbsp oil  Used to brush on stuffed mushrooms for cooking process. Can substitute oil spray

Instructions
 

  • Begin by preheating your air fryer to 375 degrees F

Prepare your mushrooms

  • First we need to prepare our mushrooms. Thoroughly wash your mushrooms and pat dry
  • Remove the stems of the mushrooms.
    **You can save the stems for veggie stock or other recipe. Or you can discard the stems

  • Set mushrooms aside

Prepare the Indian Potato Filling

  • In a mixing bowl combine shredded potatoes, shredded carrots, peas, garlic, ginger, onion, garam masala, Chana Masala, vegan mayo, and salt

Stuff the mushrooms

  • Stuff each mushroom with the Indian potato mix

  • Spray your stuffed mushrooms lightly with oil or brush stuffed mushrooms lightly with oil. You can skip this step, but it makes keeps your stuffed mushrooms more moist as they air fry

Air Fry the stuffed mushroom

  • Place the mushrooms in the preheated air fryer. Make sure to place them in a single layer. If you have a small air fryer you will need to cook them in batches
