How to make Air Fryer Broccoli

Cooking broccoli in the air fryer is a game changer! It’s so easy and has a wonderful roasted flavor.

Simply preheat your air fryer to 350 degrees F. If you don’t have a preheat setting on your air fryer, just turn it on with nothing in it for 5 minutes before using.

Cut your broccoli to the size of your desired, I like to go for the size of a large bite. Drizzle 1 tbsp of olive oil and 1/8 tsp of salt over the broccoli and mix until evenly coated.

You can use more olive oil if you want your broccoli to be more moist, but I like to save on calories and just go for the 1 tbsp. You can also skip the oil all together, but the broccoli will come out a bit more dry and crispy.

Cook the broccoli in your air fryer for 10 minutes at 350 degree F. Mix at the half way mark. And that’s it! Perfectly cooked air fryer broccoli!

While the broccoli is in the air fryer, use your time wisely and prep you 10 minute Gochujang Peanut Sauce!

How to make 10 minute Gochujang Peanut sauce

This Gochujang peanut sauce only takes 10 minutes, but it’s soooo incredibly flavorful!! To make this easy vegan Gochujang peanut sauce, simply combine 1 tbsp Gochujang, 1 tbsp mirin, 1 tsp soy sauce, 2 1/2 tsp sugar, 3 cloves of chopped garlic, 1 inch of grated fresh ginger, and 1 1/2 cup of water. Cook over medium heat for 8 minutes. This will allow the sauce to build flavor and reduce.

At the 8 minute mark, mix in 1 1/2 tsp of corn starch (which thickens the sauce), 2 tbsp peanut powder, and the juice of half a lime. Mix until smooth and evenly combined and allow to simmer for 1 more minute. You will need to mix the corn starch quickly and vigorously to keep it from clumping.

And that’s it! Sweet, spicy, low fat, vegan Gochujang Peanut Sauce!

Low Fat Gochujang Peanut Sauce for Air Fryer Broccoli

Yes! This is a low fat, oil free Gochujang Peanut Sauce! How? Instead of using peanut butter, you will use peanut powder! Peanut powder has all the peanut flavor, plenty of protein, but very little fat! Amazing right?! Because of this, you are able to make a super flavorful peanut sauce oil free and low fat!

You can find and buy peanut powder in the nut butter section of your grocery store and online!

I just wanted to give a shout out to those that are wondering…”what is Gochujang”? If you love spicy food and this is your first experience with Gochujang, you’re in for a treat! Gochujang is a spicy paste used in Korean cooking. This paste is made from fermented soy beans, rice, chili peppers, and salt. Gochujang can be described as spicy, sweet, and well rounded. It’s comforting, complex flavor is an amazing addition to many dishes.

Ingredients
  

Air Fryer Broccoli

  • 12 onces broccoli, cut into size of your choice I used bagged, precut broccoli heads for convenience
  • 1 tbsp olive oil
  • 1/8 tsp salt

Gochujang Peanut Sauce

  • 1 tbsp Gochujang
  • 1 tbsp mirin
  • 1 tsp soy sauce
  • 2 1/2 tsp sugar
  • 3 cloves garlic, chopped
  • 1 inch fresh ginger, grated
  • 1 1/2 cups water
  • 2 tbsp peanut powder can substitute peanut butter, but sauce will no longer be low fat
  • 1/2 lime, juiced
  • 1 1/2 tsp corn starch

Instructions
 

Air Fry the Broccoli

  • Preheat air fryer to 350℉. If you do not have a preheat setting, just turn you air fryer on for 5 minutes before using
  • Cut broccoli to size desired. I like to cut mine into big-bite-sized pieces
  • Drizzle 1 tbsp of olive oil and 1/8 tsp of salt on the broccoli and mix until evenly coated

  • Place broccoli in the preheated air fryer and cook for 10 minutes. Stir at the half way mark.
  • While the broccoli is cooking, use your time wisely and prep your Gochujang peanut sauce.

Gochujang Peanut Sauce

  • In a sauce pan, combine 1 tbsp Gochujang, 1 tbsp mirin, 1 tsp soy sauce, 2 tsp sugar, 3 cloves of chopped fresh garlic, 1 inch of grated fresh ginger, and 1 1/2 cups of water. Do not add the corn starch, peanut powder or lime yet!
  • Cook over medium heat for 8 minutes, stirring occasionally
  • At the 8 minute mark, add 1 1/2 tsp corn starch, 2 tbsp peanut powder, and juice from 1/2 a lime. Mix until evenly combined. Cook of one more minute.
    You need to mix the corn starch quickly and vigorously so it does not clump!

  • Remove sauce from heat

Put it all together

  • Once the air fryer broccoli and Gochujang sauce have been made, it's time to put everything together!
  • Simply plate broccoli and top with Gochujang Peanut Sauce. Serve and enjoy!
