Air Fryer Broccoli with 10 minute Gochujang Peanut Sauce

This easy, vegan recipe consists of fresh broccoli, tossed in a touch of olive oil and salt and air fried to perfection...then slathered with a 10 minute Gochujang peanut sauce. This easy vegan Gochujang peanut sauce is low fat, oil free, garlicky, sweet, spicy, with a hint of lime!

Ingredients
  

Air Fryer Broccoli
  • 12 onces broccoli, cut into size of your choice I used bagged, precut broccoli heads for convenience
  • 1 tbsp olive oil
  • 1/8 tsp salt
Gochujang Peanut Sauce
  • 1 tbsp Gochujang
  • 1 tbsp mirin
  • 1 tsp soy sauce
  • 2 1/2 tsp sugar
  • 3 cloves garlic, chopped
  • 1 inch fresh ginger, grated
  • 1 1/2 cups water
  • 2 tbsp peanut powder can substitute peanut butter, but sauce will no longer be low fat
  • 1/2 lime, juiced
  • 1 1/2 tsp corn starch

Method
 

Air Fry the Broccoli
  1. Preheat air fryer to 350℉. If you do not have a preheat setting, just turn you air fryer on for 5 minutes before using
  2. Cut broccoli to size desired. I like to cut mine into big-bite-sized pieces
  3. Drizzle 1 tbsp of olive oil and 1/8 tsp of salt on the broccoli and mix until evenly coated

  4. Place broccoli in the preheated air fryer and cook for 10 minutes. Stir at the half way mark.
  5. While the broccoli is cooking, use your time wisely and prep your Gochujang peanut sauce.
Gochujang Peanut Sauce
  1. In a sauce pan, combine 1 tbsp Gochujang, 1 tbsp mirin, 1 tsp soy sauce, 2 tsp sugar, 3 cloves of chopped fresh garlic, 1 inch of grated fresh ginger, and 1 1/2 cups of water. Do not add the corn starch, peanut powder or lime yet!
  2. Cook over medium heat for 8 minutes, stirring occasionally
  3. At the 8 minute mark, add 1 1/2 tsp corn starch, 2 tbsp peanut powder, and juice from 1/2 a lime. Mix until evenly combined. Cook of one more minute.
    You need to mix the corn starch quickly and vigorously so it does not clump!

  4. Remove sauce from heat
Put it all together
  1. Once the air fryer broccoli and Gochujang sauce have been made, it's time to put everything together!
  2. Simply plate broccoli and top with Gochujang Peanut Sauce. Serve and enjoy!
