Bacon is such a magical ingredient. Its salty, fatty, smokey flavor lights up your taste buds like no other. But many of us would love to have the flavor but skip on the whole meat thing. Coconut bacon is an amazing alternative! It captures that salty, fatty, smokey flavor you are craving, but it’s completely vegan! This recipe is super quick to prepare. I love to prepare a nice sized batch and keep it in my fridge to add to sandwiches, soups, and salads all week.

Vegan Coconut Bacon

Ingredients
  

  • 1 cup Shredded coconut Bigger coconut flakes preferred
  • 2 tbsp ketchup
  • 2 tsp soy sauce
  • 1/8 tsp smoked paprika
  • 1/4 tsp liquid smoke
  • 1 tbsp butter

Instructions
 

  • Mix all ingredients (except butter) together until evenly incorporated
  • Melt vegan butter in sauce pan over medium heat
  • Stir in seasoned coconut flakes
  • Stir frequently until coconut is toasted. Do not leave unattended, it will burn quickly
  • Remove from heat
  • Add to salad, tofu scramble, sandwiches…sky is the limit!
