Vegan Coconut Bacon

Smokey, salty, fatty, delicious, "Bacon" made with coconut flakes.

Ingredients
  

  • 1 cup Shredded coconut Bigger coconut flakes preferred
  • 2 tbsp ketchup
  • 2 tsp soy sauce
  • 1/8 tsp smoked paprika
  • 1/4 tsp liquid smoke
  • 1 tbsp butter

Method
 

  1. Mix all ingredients (except butter) together until evenly incorporated
  2. Melt vegan butter in sauce pan over medium heat
  3. Stir in seasoned coconut flakes
  4. Stir frequently until coconut is toasted. Do not leave unattended, it will burn quickly
  5. Remove from heat
  6. Add to salad, tofu scramble, sandwiches...sky is the limit!
