This garlic scape hot sauce is made with garlic scapes, cucumber, Thai basil, cilantro, ginger, and a nice blend of spices to balance out the flavor.

WHAT YOU NEED TO MAKE GARLIC SCAPE HOT SAUCE
- GARLIC SCAPES – Garlic scapes are the stem and flower bud of the hardneck garlic plant. They are longs, green, and slightly curly. And yes, the whole scape is edible! They taste like garlic and are absolutely delicious. They are great pickled, in pestos, added to stir fries, or made into hot sauce. You can typically find garlic scapes at your farmers market in late spring and summer.
- CUCUMBER
- THAI BASIL
- CILANTRO
- CHILI PEPPER – I went with a little red chili pepper. But feel free to change it up. Jalapeños or any spicy pepper would be great in this sauce.
- LEMON GRASS
- GINGER
- OLIVE OIL
- RICE VINEGAR – you can substitute any vinegar if desired
- LIME JUICE
- DIJON MUSTARD
- CAPERS
- NORI FLAKES – nori flakes are seaweed flakes. This adds a bit of a seafood flavor to the sauce
- SUGAR – feel free to substitute maple syrup or agave
HOW TO MAKE GARLIC SCAPE HOT SAUCE
Making this garlic scape hot sauce couldn’t be more simple!
Cut the garlic scapes into smaller pieces, about 2 inches long, this way they will blend easier.
Peel your ginger.
Cut up your cucumber into smaller pieces to it will blend well.
And remove the hard outer layer of the lemon grass and chop into smaller pieces so it can blend more easily.
Place all ingredients in a blender. Blend on high for about 1 minute or until smooth.
**If needed add a touch of water to allow your sauce to blend more easily.

TIPS FOR MAKING GARLIC SCAPE HOT SAUCE
- PREPARE YOUR LEMON GRASS – To prepare your lemon grass, make sure you remove the outer hard layer or two. Then chop into smaller pieces so it will blend more easily
- ADJUST THE SPICE LEVEL – For this garlic scape hot sauce recipe I only added one chili pepper. But feel free to adjust if need.
- ADD WATER IF NEEDED – If your cucumber is juicy enough, this hot sauce will blend nicely. If your blender can’t quite break it down, add a touch of water as needed.
WHAT TO SERVE WITH GARLIC SCAPE HOT SAUCE
This garlic scape hot sauce is delicious on tacos, sandwiches, and burritos. It makes a nice spicy dip for skewers as well. Or spice up a charcuterie board with this baby! Because if it’s Thai inspired ingredients, I love adding it to curries and coconut soups.

Ingredients
- 1 bundle garlic scapes about 1 cup when chopped up
- 1 large cucumber
- 1/4 cup thai basil
- 1/4 cup cilantro
- 2 inches lemon grass remove the outer hard layer
- 1 red chili pepper Substitute any hot pepper and adjust spice level as needed
- 1/2 inch fresh ginger
- 1 tbsp olive oil
- 1/2 tbsp rice vinegar
- 1 tbsp lime juice
- 1 tsp dijon mustard
- 1 tbsp capers
- 1 tsp nori flakes
- 2 tsp sugar
- 1/4 tsp sea salt
- add a little water if needed to blend
