Air fried enoki mushrooms are incredibly easy to make. You can keep it super simple and just brush a little bit of oil and flaky sea salt on them and simply air fry until golden brown. OR BETTER YET… you can take it to the next level and slather your air fried enoki mushrooms with a delicious sauce…a miso sake sauce perhaps?!
To make air fried enoki mushrooms, simply toss enoki mushrooms in oil or a sauce and air fry at 375 degrees for 5-7 minutes. That’s it!
What oil to use for air fried enoki mushrooms
When it comes to air frying, you need to choose your oil wisely. You need need to choose an oil with a high smoke point. Oils with high smoke points include avocado, peanut, canola, sunflower, and sesame oil.
You can use regular sesame oil, but do not use toasted sesame oil when air frying ingredients for longer than a few minutes. Toasted sesame oil has a low smoke point. Since it’s already been toasted, it will burn. For this recipe you will use toasted oil, but you will only have cook it for a short period of time, so it will not affect the flavor negatively.
A lot of people use olive oil in air fryers, but technically you shouldn’t. Olive oil is not an oil with a high smoke point, so it could negatively affect the flavor of your dishes. But again, if you are air frying a recipe at a lower temperature or for a short period of time, it will most likely be fine.
Where to buy enoki mushrooms
Enoki mushrooms aren’t quite as easy to find as your basic white mushrooms, but they are easy enough to find. You can find them in Asian grocery stores and in some large or specialty grocery stores. You also may be able to find enoki mushrooms at your local farmer’s market.
Substitute for enoki mushrooms
If you cannot find enoki mushrooms, this recipe will be delicious with pretty much any mushroom. Shiitake mushrooms would be my second choice. You may need to adjust the cook time slightly depending on the size and thickness of the mushrooms you substitute.

Air fried enoki mushrooms recipe : with miso sake sauce
Ingredients
- 10.8 ounces fresh enoki mushrooms enoki mushrooms often come in 5.4oz packages, so you will need 2
- 2 tbsp avocado oil can substitute any oil with a high smoke point
Miso Sake Sauce
- 1 tbsp miso paste I used white miso, but any miso paste works
- 1 tbsp soy sauce
- 2 tsp toasted sesame oil
- 2 tsp rice vinegar
- 2 tsp sake
- 2 tsp brown sugar can substitute any sugar or sweetener
- 4 cloves of garlic minced
- 1 inch of fresh ginger, grated
Toppings
- 1 tbsp black sesame seeds
- 2 scallions, thinly sliced
Instructions
- If your enoki mushrooms have dirty or hard ends, cut them off. Wash mushrooms thoroughly
- Toss enoki mushrooms in 2 tbsp of avocado oil
- Place enoki mushrooms in air fryer and cook at 375 degrees for 4 minutes
- While enoki mushrooms are cooking, move ahead to prepare the miso sake sauce
For the miso sake sauce
- chop the garlic and grate the fresh ginger
- In a bowl, place chopped garlic and grated ginger. Add the rest of the ingredients listed under the miso sake sauce. Mix until evenly distributed
Cover enoki mushrooms with miso sake sauce
- Once enoki mushrooms have fried for the first 4 minutes, it's time to add the sauce
- Evenly cover the mushrooms with the prepared miso sake sauce and air fry for another 2 minutes at 375 degrees
- **You add the sauce for the last two minutes so the toasted sesame oil and garlic do not burn
Top and Plate
- When enoki mushrooms are done cooking, remove from air fryer and top with chopped scallions and sesame seeds
