Air fried enoki mushrooms recipe : with miso sake sauce
Enoki mushrooms, slathered in a miso sake sauce, air fried to perfection, and topped with scallions and sesame seeds.

- 10.8 ounces fresh enoki mushrooms enoki mushrooms often come in 5.4oz packages, so you will need 2
- 2 tbsp avocado oil can substitute any oil with a high smoke point
Miso Sake Sauce
- 1 tbsp miso paste I used white miso, but any miso paste works
- 1 tbsp soy sauce
- 2 tsp toasted sesame oil
- 2 tsp rice vinegar
- 2 tsp sake
- 2 tsp brown sugar can substitute any sugar or sweetener
- 4 cloves of garlic minced
- 1 inch of fresh ginger, grated
Toppings
- 1 tbsp black sesame seeds
- 2 scallions, thinly sliced
If your enoki mushrooms have dirty or hard ends, cut them off. Wash mushrooms thoroughly
Toss enoki mushrooms in 2 tbsp of avocado oil
Place enoki mushrooms in air fryer and cook at 375 degrees for 4 minutes
While enoki mushrooms are cooking, move ahead to prepare the miso sake sauce
For the miso sake sauce
chop the garlic and grate the fresh ginger
In a bowl, place chopped garlic and grated ginger. Add the rest of the ingredients listed under the miso sake sauce. Mix until evenly distributed
Cover enoki mushrooms with miso sake sauce
Once enoki mushrooms have fried for the first 4 minutes, it's time to add the sauce
Evenly cover the mushrooms with the prepared miso sake sauce and air fry for another 2 minutes at 375 degrees
**You add the sauce for the last two minutes so the toasted sesame oil and garlic do not burn
Top and Plate
When enoki mushrooms are done cooking, remove from air fryer and top with chopped scallions and sesame seeds
Serve and enjoy! This recipe makes a perfect side dish or can be enjoyed as a main course when served over rice
