I recommend tossing your veggies in a little oil to help keep them moist. However, if you are adamant about skipping all of the oil, feel free too! You’re veggies will cook fine, they just will be slightly more dry.

WHAT IS GOCHUJANG
Before we dive into how to make vegan garlic Gochujang sauce, let’s go back to the basics…what is Gochujang? If you love spicy food and this is your first experience with Gochujang, you’re in for a treat! Gochujang is a spicy paste used in Korean cooking. This paste is made from fermented soy beans, rice, chili peppers, and salt. Gochujang can be described as spicy, sweet, and well rounded. It’s comforting, complex flavor is an amazing addition to many dishes.
HOW TO MAKE VEGAN GARLIC GOCHUJANG SAUCE
To prepare this vegan garlic Gochujang sauce you will need 1 tbsp Gochujang, 1 tbsp mirin, 2 tsp rice vinegar, 1 tsp soy sauce, 2 tsp sugar, 3 cloves of chopped garlic, 1 inch of grated fresh ginger, 1 1/2 cups of water, 1 1/2 tsp corn starch (that will be added towards the end), and 1/4 tsp toasted sesame oil (also added at the end).
Simply combine all of the sauce ingredients in a sauce pan, except the corn starch and toasted sesame oil (these will be added later), and cook over medium heat for 10 minutes. This will allow your sauce to cook down and for all of those flavors to infuse. After 10 minutes, mix in corn starch and toasted sesame oil. And that’s it! Sweet, spicy, savory Gochujang sauce in a flash!

Air Fryer Green Beans with spicy Gochujang Sauce

Ingredients
- 12 oz green beans
- 1/2 tbsp olive oil can substitute any neutral oil
- 1/8 tsp salt
For spicy Gochujang Sauce
- 1 tbsp Gochujang
- 1 tbsp mirin
- 2 tsp rice vinegar
- 1 tsp soy sauce
- 2 tsp sugar
- 3 cloves garlic, chopped
- 1 inch fresh ginger, grated
- 1 1/2 cups water
- 1 1/2 tsp corn starch
- 1/4 tsp toasted sesame oil
Instructions
Air Fry the Green beans
- Preheat air fryer to 400℉.**If your air fryer does not have a preheat button, simply turn it on with nothing in it for 5 minutes before use
- Toss green beans in olive oil and salt until evenly coated
- Place green beans on an air fryer tray and place in preheated air fryer. Cook for 10 minutes at 400℉. At the half way mark, mix them around to allow to cook evenly.
- Green beans will be ready when they are tender and juicy, with a slightly roasted outside.
- **While green beans are air frying, use your time wisely and prepare the sauce
Prep the spicy Gochujang sauce
- In a sauce pan, combine all of the ingredients listed under "spicy Gochujang sauce", except for the corn starch and toasted sesame oil. Leave those to the side for now.
- Cook over medium heat for 10 minutes, stirring occasionally.
- At the 10 minute mark, add the corn starch and stir until dissolved. Corn starch thickens the sauce.
- **you need to stir the corn starch in quickly and vigorously do avoid clumping
- Add toasted sesame oil. Stir to combine and remove sauce from heat.
Put it all together
- Once your green beans have finished cooking and your sauce is made, it's time to put it all together!
- Plate the air fryer green beans and pour spicy Gochujang sauce over them or leave the sauce on the side as a dipping sauce. Serve and enjoy!
