- PURPLE SWEET POTATOES – Purple sweet potatoes also go under the name Japanese sweet potatoes. If you cannot find purple sweet potatoes, just substitute regular sweet potatoes.
- VEGAN YOGURT – Yes! There is such a thing as vegan yogurt and there are some really fantastic options on store shelves these days! For this recipe, I went with the brand forager project, which is made from cashews and coconut. More specifically I went with the vanilla flavor. This brand of vegan yogurt is fantastic! The texture and flavor are great.
- FRESH FRUIT – For these Breakfast Air Fryer Purple Potatoes I went with strawberries and raspberries, but feel free to go with fresh fruit of your choice…my next choice would be figs or blueberries.
- MAPLE SYRUP
- PECANS – Can substitute any nut or seed of your choice

HOW TO MAKE BREAKFAST AIR FRYER PURPLE POTATOES
This Breakfast Air Fryer Purple Potatoes recipe is soooo simple to make. Here’s how…
PURPLE POTATOES
First you will start with the air fryer purple potatoes!
Begin by preheating your air fryer to 400ºF.
Next, thoroughly washing 4 purple sweet potatoes. Then peel the skin off.
You can leave the skin on for extra nutrients if desired.
Slice your potatoes into round disks about 1/4 inch thick.
Place your sliced purple sweet potatoes in a bowl and mix with 1 tbsp of avocado oil.
Place your purple potatoes in a single layer on an air fryer tray. If you have a smaller air fryer you may need to work in batches.
Place the purple sweet potatoes in the preheated air fryer and cook for 15 minutes, flip at the half way mark. Potatoes will be done when they are soft and tender.
**Air fryers tend to vary a lot in temperature. So cooking times may vary. Check your sweet potatoes at the 10 minute mark to make sure they aren’t already done. Some air fryers may take up to 20 minutes. Adjust as needed.
While the sweet potatoes are cooking, use your time wisely and prepare the other ingredients. Wash and slice your fruit and prepare the sweet vanilla vegan yogurt sauce.
SWEET VANILLA VEGAN YOGURT SAUCE
This sweet vanilla vegan yogurt sauce is so delicious and the perfect companion to make your air fryer purple potatoes extra special! And it only take about a minute to make!
To make sweet vanilla vegan yogurt sauce, simply combine 1/4 cup of vegan yogurt (use vanilla yogurt for more flavor), 1 tbsp maple syrup, 1/8 tsp cinnamon, 1/16 tsp nutmeg, 1/16 tsp sea salt, and 1/4 tsp of vanilla.
Mix until evenly combine and DONE!
PUT IT ALL TOGETHER

- PREHEAT YOUR AIR FRYER – Always make sure you preheat your air fryer so it’s the correct temperature when you use it to cook. If your air fryer doesn’t have a preheat button, simply turn it on with NOTHING in it 5 minutes prior to using. Make sure nothing is in it…parchment paper could catch on fire if it’s not held down by food.
- SLICE YOUR POTATOES TO THE SAME SIZE – When you are slicing the your potatoes make sure they are all sliced to the same thickness. This will allow them to cook evenly.
- DON’T OVERLAP YOUR POTATOES IN THE AIR FRYER – I know, I know…it’s super tempting to overlap your ingredients in the air fryer so you can fit more in there, but don’t do it! Lay out your ingredients in a single layer so everything can cook evenly.
