Parfaits are a satisfying and refreshing way to start your day. There are many wonderful flavors of vegan yogurt on the store shelves, but I love taking the plain version and infusing it with my own flavors. This allows me to have control over the amount of sugar added and create new fun flavors!

For this particular recipe I made a coconut yogurt. It’s very delicious, tastes like dessert, and pairs well with an abundance of different fruits.

THE YOGURT

Vegan yogurt has come a loooong way and is now absolutely creamy and delicious. There are many amazing flavors on the store shelves. These days my go-to is Oatly. For this recipe I used Oatly’s Plain yogurt. 

To sweeten and flavor the yogurt I added a bit of liquid coconut stevia. This flavoring is delicious in my opinion and is always a staple in my cabinet. You can find it in most stores and online. I purchased mine from Amazon.

I added juice from 2 lemons to brighten to flavor. If you want to kick up the flavor even more, add a bit of zest from the lemons.

To add an extra dessert-like flavor to the yogurt, I add vanilla. It makes it taste amazing!

THE GRANOLA

There are endless amounts of granola on store shelves that are fantastic. But most of the time I like to create my own. By doing so I can control the amount of sugar and oils added to it. It’s very quick to make your own granola, it’s cheaper, and you can make it in larger batches so it’s ready to go all week.

For this recipe I used oats, shredded coconut, slivered almonds, and sunflower seeds to create the granola. To give it a well rounded flavor, I toasted it on a non-stick pan. To do so you do not need any oil! I punched up the flavor more by adding salt, vanilla extract, and maple syrup.

Feel free to swap out nuts, seeds, and sweetener if desired!

THE FRUIT

For this recipe I went with berries, grapes and figs this time around. But sky is the limit!

This yogurt would pair well with mango, bananas, strawberries, or pineapple for a Pina Colada version!

Ingredients
  

FOR THE YOGURT

  • 3 cups plain vegan yogurt I used Oatly
  • 2 lemons, juiced
  • 2 tsp vanilla extract
  • Couple drops of coconut liquid stevia To taste
  • pinch of salt

FOR THE GRANOLA

  • 1 cup dry quick oats
  • 4 tbsp shredded coconut
  • 4 tbsp slivered almonds
  • 4 tbsp sunflower seeds
  • 2 tsp vanilla extract
  • 2 tbsp maple syrup can substitute agave
  • pinch of salt to taste

FOR THE FRUIT

  • 1 cup fresh figs, sliced
  • 1 cup place berries
  • 1 cup grapes, cut in half

Instructions
 

FOR THE YOGURT

  • Combine all ingredients for the yogurt in a bowl
    liquid coconut stevia for vegan yogurt
  • Mix until evenly distributed
  • Set aside

FOR THE GRANOLA

  • Add oats, shredded coconut, almonds, and sunflower seeds to a non-stick pan
    oats, nuts, and coconut for vegan granola
  • Cook over medium heat until toasted
  • Remove from heat and add salt, vanilla extract, and maple syrup

  • Stir until evenly distributed
  • Set aside to cool

PREP FRUIT

  • Wash and slice fruit

  • Set aside

PUT IT ALL TOGETHER

  • Place 3/4 cups of yogurt in each bowl (serves 4)
  • Top with oats and fruit
  • Enjoy!
