Guinness Beyond Steak Vegan Quesadillas are made with Beyond Steak, pan seared with shallots and garlic, then cooked down in a Guinness beer gravy. These Guinness gravy infused vegan steak tips are then loaded into a tortilla with its friends…vegan cheddar cheese, sauerkraut, waffle fries, and chives. And it’s all pan seared, crisped and melted to perfection!

This recipe is intended to be for a party, so it makes 20 (small) Guinness Beyond Steak Vegan Quesadillas. If you aren’t feeding a crowd…just cut the recipe in half or more if needed.

BEYOND STEAK TIPS IN GUINNESS GRAVY INGREDIENTS
- BEYOND STEAK TIPS – Beyond Steak Tips are a plant-based alternative to steak. This vegan alternative for steak is honestly outstanding. The taste is savory, meaty and delicious. The texture is excellent. Beyond Steak tips have a great chew to them and crisp up on the edges very nicely when sautéed or air-fried. Beyond Steak tips are an amazing source of plant-based protein. With a whopping 21g of protein per serving, it is the perfect addition to any meal. You can find a bag of these babies in the frozen section of your grocery store. Most likely in the frozen vegan and vegetarian meat section.
- GUINNESS – It was a beautiful day for vegans when Guinness finally became vegan! It’s official folks…Guinness beer is vegan! For those of us who have not had Guinness…Guinness is a stout beer. It can be described as light bodied, slightly creamy and sweet. Guinness has a bit of a sharp, bitter flavor from hops, but it’s rounded out with hints of malt, cocoa, cherry and raisin. Adding Guinness to this vegan stout gravy gives it a sharp, complex flavor that any beer enthusiast will love. For this recipe, I went with Guinness Extra Stout because it has an even bolder flavor than the original and holds up in cooking better.
- VEGAN BUTTER – There are many versions of vegan butter out there these days! My personal favorite is Myoko’s plant based butter. But feel free to use your favorite brand!
- NOT-BEEF BOUILLON CUBE – For this recipe I used Edward and Son’s Not-Beef bouillon cubes. These are full of flavor and help create more of a beef flavor. If you can’t find them, you can substitute another bouillon cube if desired. You can buy Edward and Son’s Not-Beef bouillon cubes in some grocery stores, including Whole Foods. You will find them in the broth section or the health food section of the grocery stores. You can always find them online as well! They are sold on Amazon.
- SHALLOTS – can substitute 1/2 an onion if desired
- GARLIC
- DIJON MUSTARD
- GARLIC POWDER
- ONION POWDER
- FLOUR – used to thinken the Guinness Gravy
THE REST OF THE INGREDIENTS FOR THE EGG ROLLS
- WAFFLE FRIES – I went with Alexia’s seasoned waffles fries and they are DELISH, but feel free to use your brand of choice.
- VEGAN CHEDDAR – There are so many delicious options for vegan cheese out there these days! For this recipe I used Daiya’s vegan cheddar, but feel free to use whatever vegan cheese you prefer!
- SAUERKRAUT – Make sure you drain your sauerkraut well before adding! No one likes soggy quesadillas.
- CHIVES
- SMALL FLOUR TORTILLAS – You can use any tortilla size of choice. I just went with the small ones to make them more finger food friendly.
- VEGAN BUTTER
HOW TO MAKE THE GUINNESS BEYOND STEAK TIPS
As mentioned above, the only part of the recipe that you will actually be cooking from scratch is the Beyond steak tips in Guinness gravy. And don’t worry…it’s quick and painless!
Simply melt vegan butter in a skillet over medium heat. Then add sliced shallots and cook for 3 minutes, stirring occasionally.
Add the diced cloves of garlic. Cook for another 2 minutes, stirring occasionally.
Add both bags of Vegan Beyond Steak Tips. Cook for 5 minutes, stirring often.
Add one cup of Guinness beer. Continue to stir.
Add the 1/2 Bouillon cube, Dijon mustard, garlic powder, onion powder, poultry seasoning, and flour. Continue to cook for another 5 minutes, stirring often.
When all of the liquid has been absorbed and the vegan Beyond steak begins to brown, it’s ready to be turned into Irish quesadillas!

HOW TO PREP BEYOND STEAK QUESADILLAS AHEAD OF TIME
These Guinness Beyond Vegan Quesadillas are absolutely perfect to prep ahead of time! Just make the Guinness steak, bake the waffle fries, and construct the quesadillas…but don’t cook them yet! You can store then in an air tight container in the fridge for up to 5 days OR in the freezer for up to 3 months. When you are ready to serve them, cook them on a skillet (thaw first if they were frozen) and enjoy!
Guinness Beyond Steak Vegan Quesadilla Recipe
Equipment

Ingredients
- 2 bags Vegan Beyond Steak Tips
- 1/4 cup vegan butter
- 2 shallots, sliced thin
- 2 cloves of garlic, diced small
- 1 cup Guinness Beer
- 1 tsp Dijon Whole Grain mustard
- 1/2 non-beef bouillon cube I used Edward and Son's
- 2 tbsp flour
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp poultry seasoning
Other Ingredients
- 20 small flour tortillas Can use larger size, just adjust filling as needed
- 20 oz Bag of frozen waffle fries I used Alexia's seasoned waffle fries
- 2 1/2 cup shredded vegan cheddar cheese
- 10 tbsp Sauerkraut
- 4 tbsp chives, diced into tiny pieces
- 2 tbsp vegan butter
Instructions
Bake or air fry your waffle fries
- Follow instructions on waffle fry bag and preheat oven to correct temperature.If using an air fryer, preheat to 400℉.
- Place waffle fries in oven (or air fryer) and cook. If you are using an air fryer it will take 8-10 minutes. If you are using an oven follow instructions on the bag.
- **While your waffle fries are cooking, use your time wisely and move ahead to the rest of the recipe
Make the Beyond Steak Tips in Guinness Gravy
- In a skillet, melt vegan butter over medium heat
- Add sliced shallots and cook for 3 minutes, stirring occasionally

- Add both bags of Vegan Beyond Steak Tips. Stirring often, cook for 5 minutes
- Add one cup of Guinness beer. Continue to stir.

- When all of the liquid has been absorbed and the vegan Beyond steak begins to brown, it's ready!
- Remove from heat
Construct your quesadillas
- On a flat surface, lay out your tortillas.
- Fill each tortilla with 2 tbsp Guinness Beyond Steak Tips, 2 tbsp vegan cheddar, 1/2 tbsp sauerkraut, 1 or 2 baked waffle fries (depending on size) and a sprinkle of chives.**Amount of filling may vary depending on size of tortillas
- Repeat process until all of the quesadillas are constructed
Cook your quesadillas
- In a large skillet 1/5 of the melt vegan butter over medium heat**You will have to work in batches, size will vary depending on the size of your tortillas and skillet. I found working in batches of 4 quesadillas worked best for me
- Once butter has melted, place 4 quesadillas in the skillet, leaving them flat and open. Cover the skillet so the toppings heat up faster. Cook for two minutes until the tortillas start to brown, then fold in half. The outside should be brown and crisp, the cheese should be melted. **If your cheese needs more time to melt, give the quesadillas a bit more time on each side. Remove from skillet.
- Repeat process (1/5 of butter in skillet and 4 quesadillas at the time) until all of the Guinness Beyond steak quesadillas have been made.
- Serve and enjoy!
