Parfaits are a quick and satisfying way to start your day. There are many wonderful flavors of vegan yogurt on the store shelves, but I love taking the plain version and infusing it with my own flavors. This allows me to have control over the amount of sugar added and kick up the protein if desired!

For this particular parfait, I went with peanut butter…peanut butter powder to be exact. Loaded with peanut flavor and protein, but it skips all the extra fat and oil of traditional peanut butter.

THE YOGURT

Vegan yogurt has come a loooong way and is now absolutely creamy and delicious. There are many amazing flavors on the store shelves. These days my go-to is Oatly. For this recipe I used Oatly’s Plain yogurt.

To sweeten the yogurt I added a bit of maple syrup. You can substitute with agave or stevia and adjust the amount depending on desired level of sweetness you’re looking for.

To add an extra dessert-like flavor to the yogurt, I add vanilla. It makes it taste delicious!

And of course, the star of the show, peanut butter powder. Peanut powder is a staple in my kitchen. I add it to desserts, smoothies, and Thai dishes. It adds protein and a delicious peanut flavor to any dish, but isn’t super rich with oil and fat like traditional peanut butter is.

This peanut yogurt is also delicious paired with just fruit. If you amp up the sweetener and vanilla a touch it makes an amazing dip for berries and apples that tastes a lot more indulgent than it is! Perfect light dessert!

THE TOPPINGS

Every parfait needs granola! You can use any granola of your choice. When choosing your preferred granola, remember not all granolas are created equal! Some have a lot more sugar, oils and extra ingredients than others. So be sure to flip over the bags and do a little reading before you head to the checkout counter.

Berries are also a must for parfaits. I personally am a huge sucker for blackberries and blueberries on any given day. But they are particularly delicious with peanut yogurt! The combination leaves you with the nostalgic flavor of a PB&J sammie.

Ingredients
  

FOR PEANUT BUTTER YOGURT

  • 1 1/2 cups Plain vegan yogurt I used Oatly
  • 2 tbsp peanut powder
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup can adjust to desired sweetness
  • Pinch of salt

TOPPINGS

  • 1/2 cup granola of choice
  • 2 cups berries I used blueberries and blackberries

Instructions
 

MAKE THE YOGURT

  • Combine all ingredients for peanut yogurt
    Vegan peanut butter yogurt
  • Mix until evenly combined

BUILD THE PARFAIT

  • Split yogurt into two bowls (recipe serves two)

  • Top with granola and berries
