Creamy, protein packed peanut butter yogurt parfait. Topped with granola and berries. Yes, it's vegan!

Ingredients
  

FOR PEANUT BUTTER YOGURT
  • 1 1/2 cups Plain vegan yogurt I used Oatly
  • 2 tbsp peanut powder
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup can adjust to desired sweetness
  • Pinch of salt
TOPPINGS
  • 1/2 cup granola of choice
  • 2 cups berries I used blueberries and blackberries

Method
 

MAKE THE YOGURT
  1. Combine all ingredients for peanut yogurt

  2. Mix until evenly combined
BUILD THE PARFAIT
  1. Split yogurt into two bowls (recipe serves two)
