Creamy, protein packed peanut butter yogurt parfait. Topped with granola and berries. Yes, it's vegan!

Ingredients
  

FOR PEANUT BUTTER YOGURT

  • 1 1/2 cups Plain vegan yogurt I used Oatly
  • 2 tbsp peanut powder
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup can adjust to desired sweetness
  • Pinch of salt

TOPPINGS

  • 1/2 cup granola of choice
  • 2 cups berries I used blueberries and blackberries

Instructions
 

MAKE THE YOGURT

  • Combine all ingredients for peanut yogurt
    Vegan peanut butter yogurt
  • Mix until evenly combined

BUILD THE PARFAIT

  • Split yogurt into two bowls (recipe serves two)

  • Top with granola and berries
