Who can resist a BLT? I know I can’t. It hits all the right notes. The smoky, salty, fatty deliciousness of the bacon, the freshness of the tomato and greens, and it comes all together with of course the Mayo. For this version I swapped out coconut bacon for the bacon and vegan Mayo for the mayo. So this sandwich still hits all the right notes, but it’s completely vegan!

COCONUT BACON

Coconut bacon is a vegan take on bacon. Made with coconut flakes and flavored with a smokey, salty sauce, it has the essence of bacon with none of the meat! In this recipe I sautéed the bacon with a little of vegan butter to add even more fatty flavor to the dish, but you can skip the butter to save on calories and just use a nonstick pan.

ARUGULA

Traditionally BLTs are made with lettuce of course. But I wanted something with more of a bite and personality, so I swapped it for arugula.  Amongst many health benefits, Arugula is a great source of calcium, folate, iron, and fiber. But if the bite is too much for you, swap it out with your green of choice.

SEASON YOUR BREAD

For this recipe I used sourdough bread. I love the taste of sourdough, plus it contains healthy bacteria which aids in digestion. You can use any bread for this recipe. Whatever bread you use, just make sure you season it! Seasoning your bread is a great trick to bring more flavor to your sandwiches. Drizzle some lemon (or vinegar) lightly over the bread and add a pinch of salt and pepper. Trust me, it’s a game changer.

TRUFFLE MAYO

Mayo is essential to complete a BLT! For this sandwich I decided to get a little fancy and use truffle Mayo. Super simple, just vegan Mayo plus truffle powder! You can find truffle powder on Amazon and some grocery stores. I love having it in my cabinet because it adds an earthy, delicious flavor to any dish. If you don’t have or like truffle powder, just substitute regular mayo or hummus. Both are great alternatives.

ADD ONS

This BLT is delicious and satisfying as is. But extra love never hurts! Feel free to add avocado, banana peppers for some spice, or mashed chickpeas or air fried tofu for some protein. All are excellent additions!

Vegan BLT

Vegan twist on the classic BLT. Made with coconut bacon, tomato, arugula, and vegan truffle Mayo.

Ingredients
  

  • 8 slices of bread I used sourdough
  • 1 tomato
  • 1 cup arugula
  • 1 lemon
  • salt to taste
  • pepper to taste

Coconut Bacon

  • 1 cup coconut flakes Bigger ones are better
  • 2 TBS ketchup
  • 2 tsp soy sauce
  • 1/8 tsp smoked paprika
  • 1/4 tsp liquid smoke
  • 1 tbsp vegan butter

TRUFFLE MAYO

  • 1/4 cup vegan mayo
  • truffle powder to taste

Instructions
 

COCONUT BACON

  • Mix all ingredients (except butter) under coconut bacon together until evenly incorporated
  • Melt vegan butter in sauce pan over medium heat
  • Stir in seasoned coconut flakes
  • Stir frequently until coconut is toasted. Do not leave unattended, it will burn quickly
  • Remove from heat and set aside

TRUFFLE MAYO

  • Mix together vegan mayo and truffle powder
  • Set aside

PUT IT ALL TOGETHER

  • Toast bread
  • Season bread with lemon juice, salt, and pepper
  • Spread vegan mayo on toast
  • Add coconut bacon
  • Top bacon with arugula
  • Slice tomato and place on top of arugula. Top with bread.
  • Serve!
