Method
COCONUT BACON
- Mix all ingredients (except butter) under coconut bacon together until evenly incorporated

- Melt vegan butter in sauce pan over medium heat

- Stir in seasoned coconut flakes
- Stir frequently until coconut is toasted. Do not leave unattended, it will burn quickly

- Remove from heat and set aside

TRUFFLE MAYO
- Mix together vegan mayo and truffle powder
- Set aside

PUT IT ALL TOGETHER
- Toast bread
- Season bread with lemon juice, salt, and pepper
- Spread vegan mayo on toast

- Add coconut bacon

- Top bacon with arugula

- Slice tomato and place on top of arugula. Top with bread.

- Serve!
