Vegan BLT with coconut bacon

Vegan BLT

Vegan twist on the classic BLT. Made with coconut bacon, tomato, arugula, and vegan truffle Mayo.

Ingredients
  

  • 8 slices of bread I used sourdough
  • 1 tomato
  • 1 cup arugula
  • 1 lemon
  • salt to taste
  • pepper to taste
Coconut Bacon
  • 1 cup coconut flakes Bigger ones are better
  • 2 TBS ketchup
  • 2 tsp soy sauce
  • 1/8 tsp smoked paprika
  • 1/4 tsp liquid smoke
  • 1 tbsp vegan butter
TRUFFLE MAYO
  • 1/4 cup vegan mayo
  • truffle powder to taste

Method
 

COCONUT BACON
  1. Mix all ingredients (except butter) under coconut bacon together until evenly incorporated
  2. Melt vegan butter in sauce pan over medium heat
  3. Stir in seasoned coconut flakes
  4. Stir frequently until coconut is toasted. Do not leave unattended, it will burn quickly
  5. Remove from heat and set aside
TRUFFLE MAYO
  1. Mix together vegan mayo and truffle powder
  2. Set aside
PUT IT ALL TOGETHER
  1. Toast bread
  2. Season bread with lemon juice, salt, and pepper
  3. Spread vegan mayo on toast
  4. Add coconut bacon
  5. Top bacon with arugula
  6. Slice tomato and place on top of arugula. Top with bread.
  7. Serve!
