Vegan BLT
Vegan twist on the classic BLT. Made with coconut bacon, tomato, arugula, and vegan truffle Mayo.
Total Time 10 minutes mins
- 8 slices of bread I used sourdough
- 1 tomato
- 1 cup arugula
- 1 lemon
- salt to taste
- pepper to taste
Coconut Bacon
- 1 cup coconut flakes Bigger ones are better
- 2 TBS ketchup
- 2 tsp soy sauce
- 1/8 tsp smoked paprika
- 1/4 tsp liquid smoke
- 1 tbsp vegan butter
TRUFFLE MAYO
- 1/4 cup vegan mayo
- truffle powder to taste
COCONUT BACON
Mix all ingredients (except butter) under coconut bacon together until evenly incorporated
Melt vegan butter in sauce pan over medium heat
Stir in seasoned coconut flakes
Stir frequently until coconut is toasted. Do not leave unattended, it will burn quickly
Remove from heat and set aside
PUT IT ALL TOGETHER
Toast bread
Season bread with lemon juice, salt, and pepper
Spread vegan mayo on toast
Add coconut bacon
Top bacon with arugula
Slice tomato and place on top of arugula. Top with bread.
Serve!
