Air Fryer Kimchi Beyond Meatballs with Vegan Gochujang Sauce
These air fryer Beyond Meatballs are savory, spicy, slightly sweet, and oh so delicious! This meatless meatball recipe is made with vegan Beyond beef combined with shredded eggplant, kimchi, bread crumbs, garlic, ginger, and scallions. This mixture is then rolled into meatballs, air fried to perfection, and then smothered in a spicy, easy-to-make, vegan garlic Gochujang sauce.

For Air Fryer Kimchi Beyond Meatballs
- 1 package Beyond Beef, thawed
- 1 cup eggplant, peeled and grated
- 1 cup kimchi, diced small
- 2 cloves garlic, chopped
- 1 inch fresh ginger, grated
- 2 tbsp scallions, sliced
- 1/2 cup bread crumbs
For vegan garlic Gochujang sauce
- 1 tbsp Gochujang
- 1 tbsp mirin
- 2 tsp rice vinegar
- 1 tsp soy sauce
- 2 tsp sugar
- 3 cloves garlic, chopped
- 1 inch fresh ginger, grated
- 1 1/2 cup water
- 1 1/2 tsp corn starch
- 1/4 tsp toasted sesame oil
Prep Kimchi Beyond Meatballs
Preheat air fryer to 400℉**if your air fryer doesn't have a preheat button, simply turn on your air fryer with nothing in it for 5 minutes Combine all of the ingredients for Kimchi Beyond meatballs in a large mixing bowl
Mix until evenly combined
Roll mix into meatballs (use about 1 1/2 tbsp of meat per ball). Recipe makes about 24 meatballs**you can make vegan meatballs whatever size you desire, but cooking time will be slightly effected, adjust as needed Place Beyond meatballs onto the air fryer tray in a single layer (don't over lap) and place in preheated air fryer.**if you have a small air fryer you will need to air fry your beyond meatballs in batches Cook for 10 minutes, flipping at the half way mark**if you like your meatballs more well done and crispy, cook for 12-14 minutes While Air fryer kimchi Beyond meatballs are cooking, use your time wisely and prepare the Gochujang sauce.
Prep the vegan garlic Gochujang sauce
In a sauce pan, combine all of the ingredients listed under "vegan garlic Gochujang sauce", except for the corn starch and toasted sesame oil. Leave those to the side for now.
Cook over medium heat for 10 minutes, stirring occasionally.
At the 10 minute mark, add the corn starch and stir until dissolved. Corn starch thickens the sauce.**you need to stir the corn starch in quickly and vigorously do avoid clumping Add toasted sesame oil. Stir to combine and remove sauce from heat.
Put it all together
Once your meatballs have finished cooking and your sauce is ready, it's time to put everything together!
Plate vegan beyond meatballs. You can pour the sauce over top of the meatballs and cover them OR you can serve the sauce on the side as a dip. Your choice! Garnish with sliced scallions
