Air Fryer Vegan Hot Pockets : Pepper Poppers with White Beans
If a jalapeño popper and a hot pocket had a HEALTHY VEGAN baby...this would be it! These air fryer vegan hot pockets are made with store-bought pizza dough (to make life super easy), and are stuffed with white beans, jalapeños, poblano peppers, pepperoncini peppers, vegan feta, vegan cream cheese, garlic, shallots, fresh basil, and a blend of spices to really make these babies a total flavor bomb!

- 1 14 oz package Pizza dough I used Jus-Rol brand
- 1 can Cannellini white beans Can substitute any white bean of choice
- 1 jalapeño
- 1 poblano pepper
- 1 clove of garlic
- 1 shallot
- 2 tbsp vegan cream cheese I used Miyoko's Everything Vegan cream cheese
- 2 tbsp vegan feta cheese I used Follow Your Heart vegan feta crumbles
- 2 tbsp pepperoncini peppers, chopped I used jarred
- 2 tbsp fresh basil, chopped
- 1 tsp everything bagel seasoning
- 1 tbsp nutritional yeast
- 1/8 tsp onion powder
- 1/4 tsp Italian seasoning
Optional ingredients
- 1 tbsp olive oil Optional, used to brush the top of the pockets before cooking
- Marinara sauce for serving Optional. I used Rao's Roasted Garlic Marinara sauce
Begin by preheating the oven to 400ºF. If your air fryer does not have a preheat button, simply turn your empty air fryer on and let it heat up for 5 minutes before use.
PREPARE THE VEGAN HOT POCKET FILLING
Chop up 1 jalapeño, 1 poblano pepper, 1 clove of garlic, and one shallot into small pieces.If you want the vegan hot pockets to be more spicy, include the seeds of the peppers. If you want them to be less spicy, remove the pepper seeds. Drain and rinse the can of white beans.
Place chopped ingredients and white beans in an even layer on the air fryer tray.
Place in preheated oven and cook for 10 minutes at 400ºF. Mix at the half way mark to allow ingredients to cook more evenly.
Once the ingredients have cooked for 10 minutes in the air fryer, remove from oven and transfer them to a bowl. Combine with 2 tbsp vegan cream cheese, 2 tbsp vegan feta crumbles, 2 tbsp chopped pepperoncini peppers, 2 tbsp of fresh basil, 1 tsp everything bagel seasoning, 1 tbsp nutritional yeast, 1/8 tsp onion powder, and 1/4 tsp Italian seasoning.
Mix until evenly combined.
ASSEMBLE YOUR VEGAN HOT POCKETS
Lay out the pizza dough on a flat surface. I cut my pizza dough into two batches of 8 pieces (16 pieces total). Feel free to change the size if desired, you may just have to adjust the cooking time. Then scoop 1/16th of the pepper popper filling onto one edge of the cut pizza dough. About 1 1/2 tbsp of filling per piece. (Size of scoop will vary slightly depending on the size of your peppers and shallot). Next, fold over the piece of dough so the corners meet. Then, using a fork, press down around the edges to seal the though.Repeat process until all of the vegan hot pockets have been assembled.
AIR FRY THE PEPPER POPPER VEGAN HOT POCKETS
Once your vegan hot pockets have been assembled it’s time to cook them. Place them in a single layer on the air fryer tray.If you want your dough to be a little more moist and golden brown you can brush the top of each hot pocket with oil. But this step is optional. Sprinkle with extra Everything bagel seasoning if desired.
Next, place the tray of vegan hot pockets in the preheated air fryer and cook for 10 minutes at 400ºF. Keep an eye on them while cooking, time may vary depending on air fryer. Your air fryer vegan hot pockets will be ready when the outside is golden brown, the dough is cooked, and the inside is hot. When completely cooked, remove from air fryer. Serve with a side of sauce if desired and enjoy!
