Air Fryer Vegan Hot Pockets Recipe : Italian Hand Pies

Air Fryer Vegan Hot Pockets...aka Italian hand pies, are made with store bought pizza dough (for your convenience) and loaded with vegan pepperoni, zucchini, vegan parmesan AND vegan feta, onions, peppercini peppers, basil, olives, marinara, and seasoning...and it's all folded into adorable little pockets and air fried to perfect.

Ingredients
  

  • 1 14 oz package Pizza dough I used Jus-Rol brand
  • 2.5 oz vegan Pepperoni I used the brand Field Roast (half of the package)
  • 1 green zucchini
  • 2 tbsp red onion
  • 1/4 cup fresh basil
  • 6 olives
  • 2 tbsp vegan feta crumbles I used the brand Follow Your Heart
  • 2 tbsp vegan parmesan, shredded I used the brand Follow Your Heart
  • 2 tbsp marinara sauce I used the brand Rao's Roasted Garlic Marinara Sauce, but you can use any jarred sauce of your choice
  • 1 tsp Italian seasoning
  • 1/4 tsp onion powder

Optional ingredients

  • 1 tbsp olive oil Optional, used to brush the top of the pockets before cooking
  • extra sauce for serving Optional

Instructions
 

  • Begin by preheating the oven to 400ºF. If your air fryer does not have a preheat button, simply turn your empty air fryer on and let it heat up for 5 minutes before use

Prepare the air fryer vegan hot pocket Italian filling

  • Chop up the following ingredients into small pieces. 1 green zucchini, 2 tbsp of red onion, 6 olives, and 2.5 oz of vegan pepperoni
  • Place in an even layer on the air fryer tray
  • Place in preheated oven and cook for 10 minutes at 400ºF. Mix at the half way mark to allow ingredients to cook more evenly
  • Once the ingredients have cooked for 10 minutes in the air fryer, remove from oven and transfer them to a bowl
  • Chop 1/4 cup of fresh basil and 2 tbsp pepperoncini peppers into small pieces and add to bowl.
  • Add 2 tbsp of jarred marinara sauce, 2 tbsp vegan feta cheese, 2 tbsp vegan parmesan cheese, 1 tsp Italian seasoning, and 1/4 tsp onion powder to the bowl
  • Mix until evenly combined

Assemble your vegan hot pockets

  • Lay out the pizza dough on a flat surface. I cut my pizza dough into two batches of 8 pieces (16 pieces total).
    Feel free to change the size if desired, you may just have to adjust the cooking time.
  • Scoop 1/16th of the Italian filling onto one edge of the cut pizza dough. About 1 tbsp of filling per piece
  • Fold over the piece of dough so the corners meet. Then, using a fork, press down around the edges to seal the dough
  • Repeat process until all of the Italian hot pockets have been assembled

Air Fry the Italian vegan Hot Pockets

  • Place your vegan hot pockets in a single layer on the air fryer tray. Leave space in between so they can cook properly
    **If you have a smaller air fryer, you will need to cook in smaller batches
  • If you want your dough to be a little more moist and golden brown you can brush the top of each hot pocket with oil. But this step is optional, feel free to skip it if you want to save on fat and calories.
  • Place the tray of Italian vegan hot pockets in the preheated air fryer and cook for 10 minutes at 400ºF.
    Keep an eye on them while cooking, time may vary depending on air fryer. Your Italian vegan hot pockets will be ready when the outside is golden brown, the dough is cooked, and the inside is hot.
  • When completely cooked, remove from air fryer. Serve with a side of sauce if desired and enjoy!
