Carrot Lox
"Lox" made with shaved carrots...smokey seafood flavor but it's vegan!

Cook Time 5 minutes mins
Total Time 15 minutes mins
- 3 large carrots
- 1/2 cup water
- 2 tsp liquid smoke
- 1 tbsp olive oil
- 1 tbsp white vinegar can substitute rice vinegar or any other vinegar
- 1 tbsp soy sauce
- 1 tbsp maple can substitute agave
- 1/2 tbsp salt
- 1 tbsp nori flakes
- 1 lemon, juiced
Shave carrots lengthwise so they are thinly sliced
Combine all remaining ingredients and stir
Bring to a boil in a pot
Add shaved carrots
Stir and cook over medium heat for 5 minutes
Remove from heat and allow to cool
Transfer mix into a plastic ziplock bag or container and allow to soak in fridge over night
Serve with toast and vegan cream cheese or on crackers!
Can store in the fridge for up to 5 days
