Carrot Lox

"Lox" made with shaved carrots...smokey seafood flavor but it's vegan!

Ingredients
  

  • 3 large carrots
  • 1/2 cup water
  • 2 tsp liquid smoke
  • 1 tbsp olive oil
  • 1 tbsp white vinegar can substitute rice vinegar or any other vinegar
  • 1 tbsp soy sauce
  • 1 tbsp maple can substitute agave
  • 1/2 tbsp salt
  • 1 tbsp nori flakes
  • 1 lemon, juiced

Instructions
 

  • Shave carrots lengthwise so they are thinly sliced
    thinly sliced carrots for vegan lox
  • Combine all remaining ingredients and stir
    vegan seafood marinade for vegan carrot lox
  • Bring to a boil in a pot
  • Add shaved carrots
  • Stir and cook over medium heat for 5 minutes
  • Remove from heat and allow to cool
  • Transfer mix into a plastic ziplock bag or container and allow to soak in fridge over night

  • Serve with toast and vegan cream cheese or on crackers!
