Carrot Lox

"Lox" made with shaved carrots...smokey seafood flavor but it's vegan!

Ingredients
  

  • 3 large carrots
  • 1/2 cup water
  • 2 tsp liquid smoke
  • 1 tbsp olive oil
  • 1 tbsp white vinegar can substitute rice vinegar or any other vinegar
  • 1 tbsp soy sauce
  • 1 tbsp maple can substitute agave
  • 1/2 tbsp salt
  • 1 tbsp nori flakes
  • 1 lemon, juiced

Method
 

  1. Shave carrots lengthwise so they are thinly sliced
    thinly sliced carrots for vegan lox
  2. Combine all remaining ingredients and stir
    vegan seafood marinade for vegan carrot lox
  3. Bring to a boil in a pot
  4. Add shaved carrots
  5. Stir and cook over medium heat for 5 minutes
  6. Remove from heat and allow to cool
  7. Transfer mix into a plastic ziplock bag or container and allow to soak in fridge over night

  8. Serve with toast and vegan cream cheese or on crackers!
