Snickers Steel Cut Oats : Vegan Recipe

Yes!...You can take a snickers bar and turn it into a big bowl of steamy, steel cut oats...in a much healthier way of course. Snickers Steel Cut Oats consists of steel cut oats, coconut milk, peanuts, chocolate chips, and a peanut caramel sauce...made with peanut powder, maple syrup, coconut milk, vanilla, and sea salt...an addictive caramel sauce done in a MUCH healthier way!

Ingredients
  

  • 1 cup steel cut oats
  • water 3 cups of water for stove top method for steel cut oats / if using rice cooker follow instructions for water on your rice cooker

for Peanut Caramel

  • 1/4 cup peanuts
  • 1/4 cup peanut powder
  • 1/4 cup maple syrup
  • 3/4 cup light canned coconut milk
  • 2 tsp vanilla extract
  • 1/8 tsp sea salt

Other ingredients

  • 1 cup light canned coconut milk
  • 1/4 cup chocolate chips

PREPARE THE STEEL CUT OATS

  • You have options for preparing your steel cut oats…I have instructions for stove top method and rice cooker method below. I personally prefer the rice cooker method.
  • STEEL CUT OATS IN THE RICE COOKER
    Add 1 cup of steel cut oats to your rice cooker. Add the amount of water recommended on your rice cooker (there should be a labeled line or instructions). Press start and allow to cook. My rice cooker takes one hour for steel cut oats, time will vary depending on rice cooker.

  • STEEL CUT OATS ON THE STOVE
    To prepare steel cut oats on the stove, place 3 cups of water in a pot and bring to a boil.Add in one cup of steel cut oats. Bring back to a boil and then reduce heat to low, so the oats can simmer. Simmer for 20 minutes, stirring often so the oats don't stick to the bottom of the pan. Oats will be ready when the water is absorbed and the oats are tender.

PREPARE THE PEANUT CARAMEL SAUCE

  • In a sauce pan cook 1/4 cup of peanuts over medium heat for 1 minute allowing them to slightly roast.In a sauce pan cook 1/4 cup of peanuts over medium heat for 1 minute allowing them to slightly roast.

  • Then add 1/4 cup peanut powder, 1/4 cup maple syrup, 3/4 cup light canned coconut milk, 2 tsp vanilla extract, and 1/8 tsp sea salt to the pan. Mix until fully combined. 
  • Bring heat down to medium low and allow to cook for another 2 minutes, stirring frequently. Remove from heat.

PUT IT ALL TOGETHER

  • Heat up 1 cup of light canned coconut milk and 1/8 tsp of salt on the stove top or in the microwave.
  • Recipe makes for servings. 
  • Plate 1/4 of the cooked steel cut oats into each bowl. Top with equal amounts of heated coconut milk and equal amounts of peanut caramel sauce. Top off each bowl of oats with 1 tbsp chocolate chips.
