Steel Cut Oats Indian Recipe : Lentils and Chana Masala Oats
This Indian inspired healthy vegan breakfast is super easy to make and soooo delicious! Steel cut oats, flavored with Chana Masala and coconut milk. Topped with Kashmiri curry lentils and herbs.Note: time will vary on this recipe depending on cooking method for steel cut oats
1/2 cup coconut milkI used light canned coconut milk. Can substitute other coconut milk, oat milk, or milk of your choice
3 1/2 cupswaterCan add more water if you prefer oats more liquidy
1/2tspchana masala seasoningI used MDH's Chana Masala spice blend
pinch of salt to taste
For Kashmiri Curry Lentils
1cancooked lentils
3/4 cupKashmiri CurryI used Maya Kaimal's jarred Kashmiri curry
Herbs
2tbsp fresh coriander leaves (cilantro), chopped
1tbspfresh mint, chopped
Instructions
For Chana masala steel cut oats
NOTE: If you are cooking your oats on the stovetop, follow these instructions. If you would like to cook your oats using a rice cooker or pressure cooker, refer to directions above in the "How To Cook Steel Cut Oats" section. The time and amount of liquid will vary depending of cooking method. Using the rice cooker is my preferred method.
In a medium sauce pan, combine oats with coconut milk and water
Bring to boil and reduce heat to medium-low and allow oats to simmer
Simmer for 25 minutes, stirring occasionally
At the 25 minute mark, test oats. If you like the texture remove from heat. If you would like your oats to be softer, cook another 5 or 10 minutes until desired texture is reached. Add a touch more water if needed.
When oats are at desired texture, remove from heat
Add chana masala seasoning and salt. Stir until evenly combined
Set aside
**while oats are cooking, move ahead and prep other elements of the recipe
For Kashmiri Curry Lentils
Combine canned lentils and Kashmiri curry in sauce pan. Cook over medium heat until hot.
Remove from heat and set aside
Herbs
Chop coriander and mint. Set aside
Put it all together
Plate seasoned steel cut oats
Top with Curry lentils
Top with fresh herbs
Serve and enjoy!
