Toasted Coconut Steel Cut Oats Recipe
This creamy, dreamy, steamy bowl of Toasted Coconut Steel Cut Oats are the PERFECT way to kick off your day! Toasted Coconut Steel Cut Oats are made with steel cut oats, toasted coconut, coconut milk, strawberries, coconut stevia, vanilla, and sea salt.

- 1 cup steel cut oats
- water 3 cups of water for stove top method for steel cut oats / if using rice cooker follow instructions for water on your rice cooker
- 1/2 cup coconut flakes or shreds
- 2 cups light canned coconut milk Can substitute any milk of your choice
- 10 drops coconut liquid stevia Taste and add more if needed
- 2 tsp vanilla extract
- 1 cup strawberries
PREPARE THE COCONUT
Place the 1/2 cup of shredded coconut on a pan and cook over medium heat. Stir often and cook until the coconut is toasted and slightly brown. This will only take 1-2 minutes. **Keep a close on your coconut as it toasts...it will toast quickly and you don't want it to burn! When coconut is properly toasted, remove from heat and transfer the coconut into a bowl and set aside.
In the same pan, combine 2 cups of light canned coconut milk, 2 tsp vanilla extract, 1/8 tsp of salt, and about 10 drops of coconut stevia (taste test and add more coconut stevia if desired, it is pretty strong so easy does it).
Cook over medium heat for 1 minute or until hot. Remove from heat.
PUT IT ALL TOGETHER
Cut the cup of strawberries into slices.
Place 1/4 of the steel cut oats in a bowl (recipe makes 4 servings). Top with coconut milk, toasted coconut, and strawberries.
Serve and enjoy!
