- PREPARE THE STEEL CUT OATS
- You have options for preparing your steel cut oats…I have instructions for stove top method and rice cooker method below. I personally prefer the rice cooker method.
- STEEL CUT OATS IN THE RICE COOKERAdd 1 cup of steel cut oats to your rice cooker. Add the amount of water recommended on your rice cooker (there should be a labeled line or instructions). Press start and allow to cook. My rice cooker takes one hour for steel cut oats, time will vary depending on rice cooker.
- STEEL CUT OATS ON THE STOVETo prepare steel cut oats on the stove, place 3 cups of water in a pot and bring to a boil.Add in one cup of steel cut oats. Bring back to a boil and then reduce heat to low, so the oats can simmer. Simmer for 20 minutes, stirring often so the oats don't stick to the bottom of the pan. Oats will be ready when the water is absorbed and the oats are tender.
PREPARE THE COCONUT
- Place the 1/2 cup of shredded coconut on a pan and cook over medium heat. Stir often and cook until the coconut is toasted and slightly brown. This will only take 1-2 minutes. **Keep a close on your coconut as it toasts...it will toast quickly and you don't want it to burn!
- When coconut is properly toasted, remove from heat and transfer the coconut into a bowl and set aside.
- In the same pan, combine 2 cups of light canned coconut milk, 2 tsp vanilla extract, 1/8 tsp of salt, and about 10 drops of coconut stevia (taste test and add more coconut stevia if desired, it is pretty strong so easy does it).
- Cook over medium heat for 1 minute or until hot. Remove from heat.
PUT IT ALL TOGETHER
- Cut the cup of strawberries into slices.
- Place 1/4 of the steel cut oats in a bowl (recipe makes 4 servings). Top with coconut milk, toasted coconut, and strawberries.
- Serve and enjoy!
