Vegan Bloody Mary Sundried Tomato Dip for Bagels

This infamous brunch cocktail turned into a vegan brunch finger food is made with Sun-dried tomatoes, simmered in Vodka, garlic, and maple syrup...served over a spicy vegan cream cheese spread, made with horseradish, ketchup, sriracha, and old bay seasoning...and topped off with a pickle, olive, and celery medley. And yes, of course, this vegan Bloody Mary Sundried Tomato dip is served with toasted bagel slices!

Ingredients
  

vodka infused sun-dried tomatoes
  • 1 cup sun-dried tomatoes, chopped get the ones that are completely dry, not the ones soaked in oil
  • 1/2 cup water
  • 1 clove garlic, chopped
  • 1 tbsp maple syrup
  • 5 tbsp vodka I used Grey Goose
spicy vegan cream cheese spread
  • 1 package vegan cream cheese I used Miyoko's Traditional vegan cream cheese
  • 1 tsp horseradish
  • 1 tbsp ketchup
  • 1 tsp sriracha
  • 1/4 tsp Old Bay seasoning
Topping medley
  • 2 tbsp pickles, chopped small
  • 2 tbsp olives, sliced small
  • 1 stalk of celery, finely chopped
Bagels
  • 2 Bagels, sliced into 1/4 inch pieces I used Everything bagels

Equipment

Method
 

Prep the vodka infused sun-dried tomatoes
  1. In a sauce pan combine all of the ingredients listed under "vodka infused sun-dried tomatoes". Cook over medium heat, stirring occasionally, for 10 minutes or until the liquid is completely absorbed. Remove from heat.

  2. **While the sun dried tomatoes are cooking, use your time wisely and move ahead to prep other ingredients.
Prep the spicy vegan cream cheese spread
  1. In a bowl, combine all of the ingredients listed under "spicy vegan cream cheese spread".

  2. Mix until evenly combined. Set aside

Prep the Topping medley
  1. In a bowl, combine all of the ingredients listed under "Topping medley".

  2. Mix until evenly combined. Set aside.
Prep Bagels
  1. Slice bagels into pieces about 1/4 inch thick. Toast bagel slices if desired.
Put it all together
  1. On a serving dish, spread spicy vegan cream cheese spread. Top with vodka infused sun-dried tomatoes and the topping medley.
  2. Serve with sliced bagels and enjoy!
